Let’s be honest – I’m always looking for quick meal ideas. By the time I get home from work, I have about a half hour to throw dinner together and get it on the table. Most (okay, ALL of the time) I have an unhappy one-year-old pulling at my leg as if to say, “Mom, why is there not food on my high chair tray yet?!” So, when it comes to meals, the quicker the better.
We like to use the grill as much as we can in the summer since clean-up is pretty minimal and the food always tastes so good. We’ve been doing a lot of seafood lately, and when I saw the recipe for Spiced Brown Sugar Salmon with Peach-Kiwi Salsa, I was intrigued. I love fruit salsa paired with grilled seafood, so I decided to give it a try. But then I saw the total time on the recipe…1 hour and 15 minutes? That wouldn’t work. Would it? But then I realized the total time accounts for refrigerating the salsa for an hour. Easy-peasy…I just made the salsa the night before and kept it in the refrigerator until dinner time.
The salsa ingredients are perfect for summertime dining – peaches, kiwis, green onions, parsley, lime juice and a hint of red pepper.
How beautiful is that? Just refrigerate for at least an hour (or overnight, in my case) to let the flavors really blend together.
Next, combine all of the glaze ingredients in a bowl. The mixture of sweet and spicy flavors pairs perfectly with the salmon. Heat a gas grill on medium or charcoal grill until coals are ash white. Place the salmon on the grill, skin side down. Brush with the glaze.
Grill six minutes, and then brush with the remaining glaze.
Continue grilling for about 10 minutes or until the fish flakes easily with a fork.
Serve with the beautiful salsa on top, and revel in the fact that this dinner really only took you about 15 minutes to get on the table!
Also, I forgot to mention that this recipe can also be made in the oven (which comes in handy if it’s raining!). Heat the oven to 425°F and place the salmon on a baking pan lined with aluminum foil. Brush with glaze, and bake for six minutes. Glaze, bake an additional 10 minutes or until the fish flakes easily with a fork.
Either way, Spiced Brown Sugar Salmon with Peach-Kiwi Salsa makes a quick – and delicious – dinner.
