An Easy Dinner – Quick Salsa Skillet

If there is one type of food almost all kids like its Mexican. I was reminded of this just the other day when I brought a meal to a neighbor who was going through a difficult time. He has three boys ranging in ages from 11 to 19 years old. When I knocked on the door to deliver dinner his middle son answered. I gave him the run down on the food explaining I had made them taco fixings. As soon as I said the word taco he started to smile. I obviously hit the nail on the head. Later my neighbor told me how much the boys liked the tacos so I offered to make them some more.

But, tacos once a week (or anything once a week) can get pretty boring. Quick Salsa Skillet is a great recipe to add to your dinner solutions. It satisfies that craving for Mexican flavor for the kids, provides some variety and is ready in just a little over a half hour. Best of all it only has 5 ingredients so it is extremely easy to pull together.

The recipe calls for ground turkey but feel free to substitute ground beef. If your family prefers another kind of salsa, use it instead of the black bean and corn salsa. Also, if you don’t have any shredded lettuce chopped lettuce will work just fine. In other words, this recipe is flexible and can be re-created to meet your family’s needs. Don’t you just love it!

Start by cooking the ground turkey in a 10-inch skillet.

You will know the turkey is fully cooked when it is no longer pink. Drain and season with salt and pepper, if desired.

Stir in the salsa.

Now place the cheese slices over the meat in the skillet, and sprinkle with the tortilla strips. I used the multi-colored tortilla strips which I found in the produce section of my grocery store with the salad toppings. If you can’t find them feel free to just break up some regular tortilla chips and use them instead. Remember, this recipe kind of "goes with the flow" or allows you to use "whatever," as my son would say.

Cover the skillet and reduce the heat to medium-low.

Cook until the cheese is melted. This only takes a minute or two.

Remove the skillet from the heat and sprinkle with shredded lettuce.

That’s it, dinner is ready! Of course, feel free to garnish your skillet meal with other condiments like sour cream and chopped cilantro (or "whatever").

Can you please tell me what type of cheese you are using. It sound great for my grandchildren.

Hi Alice, The cheese we used is sliced white American Cheese as shown in the picture. You could use yellow American Cheese equally as well.
