Nothing says fall like the scent of fresh baked apple pie. However, whether you’re baking an apple cobbler, making caramel apples or preparing cinnamon-apple pork chops, choosing the right variety is essential to making sure everything comes out amazing. So this season, before you visit your favorite orchard or farmer’s market, learn how to make the most of fall’s favorite fruit by studying up on your apples. Some are sweet, others tart, but any way you slice it, they’re all delicious.

You have forgotten a well known but old variety of apple - Yellow Transparents. They make the best apple sauce ever and are also excellent for apple pie. They do cook down so don't work well in Apple Dumplings. This apple does not need to be peeled, just cut into chunks, cook in a small amount of water and then put through a food mill. I use 1/4 cup of sugar for every 4 apples. I freeze the sauce in one quart size bags. I do peel and core them when making the pies.
Truly this is a great apple and it comes early in the season - about the first of August here in the Pacific NW.

I have always used northern spy apples's when baking, but the last few times they have been cooking down and not a crisp. Can you help?

Golden delicious are nice to cook with. You don't have to peel them, the skin is so thin, it practically disappears from the heat of cooking.
