Celebrate Autumn With Apple Crisp!

My husband's family - Becky's parents, their kids and the grandkids - have been celebrating autumn for decades by heading to the North Shore of Lake Superior to see the fall color. Each year they spend a long weekend together hiking, playing cards, laughing and sharing in special meals.

Each person brings their own tradition to the table, so when I joined the family, I decided that my addition would be Old-Fashioned Apple Crisp. I love Apple Crisp because it captures the essence of fall for me - the sweet taste of apples straight from the orchard combined with cinnamon and warmth. It's the kind of comfort food that makes me want to curl up with a good book.

To start, set your oven to 375 degrees and collect your few ingredients. The recipe calls for six medium-sized apples, but I managed just fine with the 4 large Pink Lady apples I had on hand. Combine the dry ingredients like so.

Now you have a few choices for how you want to add in your chunks of Land O'Lakes butter. 1) You can use a pastry blender. Since I had no idea what this was, I figured I probably didn't own one. 2) You can use a fork. I saw this in the recipe, so I started out that way. However, it seemed like I was only mashing up the butter, not really mixing it in very well. So, I called Becky to ask for some help. She suggested that I try a different route: 3) cross two knives and repeatedly cut through the mixture. This not only made the butter chunks smaller, but seemed to distribute them throughout the mixture.

 Meanwhile, carefully peel your apples.

Then slice them up. I like to cut them into little wedges like this.

Lightly grease your baking dish and then add the apple slices.

Sprinkle the crumbly sugar mixture over the apples and then place the pan in the oven.

Bake for 25 - 35 minutes. The topping should be golden brown, and it will smell fantastic!

Finally, scoop out a hearty portion for yourself and top with ice cream for a creamy contrast to your crispy dish! Sadly, I didn't realize until after I had made the apple crisp that my ice cream was gone! No worries, though, this Old-Fashioned Apple Crisp was so delicious it disappeared quickly anyway!

looks just like my moms... she would sprinkle in more cinnamon amongst the apple slices ... delicious!

Anita, you have an interesting food trivia question. Really Apple Crisp and Apple Crumble are very similiar. Both have a fruit layer on the bottom with a crumbly sweet pastry mixture over the top. The fruit layer of a crumble is typically raw fruit such as apple slices rather than canned apple pie filling. An Apple Cobbler on the other hand is a deep dish apple dessert with a thick biscuit-like crust sprinkled with sugar on the top.

This has been a fantastic apple season here in Minnesota and the season to make many wonderful apple desserts.
