I am a diehard chocolate lover. My favorite fruit is strawberries. Put those two together and I couldn’t be happier. The recipe I’m featuring today is one of my favorites. The brownie batter is made in a saucepan making it quick and easy to prepare. Topping these rich fudgy brownies with strawberries, hot fudge sauce and whipped cream creates the perfect dessert – at least in my world!
Here in Minnesota June is strawberry picking season. Just a few miles north of my home in the Twin Cities I can visit a pick-your-own strawberry patch and bring home more strawberries than I know how to handle. Although I used store bought for this recipe, I plan to make this recipe again once I get my pickin’ done. I usually freeze some of the berries with a little sugar so I can make this recipe even in non-strawberry season. Keep in mind you can use any berry or combination of berries too. I have served this brownie with raspberries from my parents’ garden and a mixture of blueberries, strawberries and raspberries. Just pick your favorite berry and go with it!
Because this is such an easy recipe you will see lots of photos and few words. I think seeing pictures is more helpful anyway J. It only takes a few minutes to mix up the brownie batter and pop them in the oven. Be sure to turn your oven on to preheat while you prepare the batter. Also, grease the bottom only of an 8-inch square baking pan. Greasing only the bottom, and not the sides, lets the brownie cling to the sides as it bakes.
All you need is a saucepan to stir up the batter. Melt the butter and chocolate in the saucepan. Be sure to watch it closely and be stirring so it doesn’t burn.
Turn the heat off and take the pan off the burner. Then, stir in the sugar.
Make sure it’s nice and smooth.
Next stir in the flour and eggs.
Once everything is well mixed stir in the walnuts. If you don’t like nuts, feel free to leave them out. The brownies will still turn out great.
Pour the batter into the pan you have ready.
Bake the brownies until they just begin to pull away from the sides of the pan. Because these are fudgy brownies it’s important to not over bake them. Be warned, anyone walking near your kitchen will be begging for a brownie – the aroma is heavenly! Let them cool completely. This will make them easier to cut.
While they are cooling combine the sliced strawberries and sugar. The sugar will add a touch of sweetness to the berries and also will combine with the moisture from the berries to make a little bit of strawberry syrup. The berries will glisten as well. I suggest combining the strawberries and sugar about 1 hour before you want to serve the dessert. If you do it too far ahead the berries will become soft.
Just before you serve dessert beat up some whipped cream. Or, if you want to make it even easier, use the ready to serve whipped cream from the dairy case. Just remember, nothing beats fresh whipped cream! Also, warm up some hot fudge topping. I usually do this in the microwave. Be careful, it heats up quickly. Place a brownie on a plate, top with warm fudge sauce and strawberries, and finish with a dollop of whipped cream.
I just love strawberry season, especially when chocolate is invited too!
