Creamy Tomato Soup: So Easy, So Good!

During school breaks, it's fun for the kids to have sleepovers with friends. Everyone stays up late and sleeps in, so I decided a good brunch for girls in PJ's would be tomato soup and grilled cheese sandwiches. Also perfect comfort food for wintertime in Minnesota! Brrrrr!

The recipe for Chunky Tomato Basil Soup on seemed too good to be true.

You basically take chicken broth, tomatoes and tomato sauce with basil and bring it all to a boil.


Then add half and half to make it creamy and heat it through -- don't let it boil after you add the half and half. So simple!


For a special touch, you can make a sour cream pesto topping with two ingredients -- sour cream and jarred pesto. Convenient fresh pesto is readily available in the deli or refrigerated section of most grocery stores. It's really that easy.


All mixed up, it makes a tasty and beautiful addition to the soup.


I happened to have some fresh basil on hand, so instead of using the tomato sauce with basil called for in the recipe, I used plain tomato sauce and cut up some basil to add to the hot soup. Add it right after you add the cream so that the fresh taste doesn't cook out! You can also substitute plain tomato sauce and dried basil, added in the first step.


The fresh basil adds a little color to this simple soup.


My husband and I, plus a few of the more adventurous kids, enjoyed a dollop of the pesto sour cream topping on our soup. Others just enjoyed it plain.


Some mixed it all up and dunked their grilled cheese sandwiches. A little less pretty, but incredibly good!
