Easy Eggs and Hash Browns Breakfast

We don’t have luxury accommodations for our overnight guests, but we do serve an excellent breakfast! Last weekend we whipped up a Breakfast Casserole, which made sleeping on the couch somehow bearable. It’s basically eggs, sausage, hash browns and cheese in one easy dish – brilliant.


Begin by buttering the pan. I use a glass pan because I love how easy they are to clean.



Mix the refrigerated hash browns, 1 ½ cups of the cheese, one egg, and the salt and pepper.


Then just press this mixture into the pan, getting up the sides to create a delicious cheesy hash brown crust.


Pop the crust into the oven for 10 minutes. While it’s baking, get everything else ready. First, brown the sausage. Start by breaking it up into pieces with the edge of a spoon.


Then cook the meat on Medium-High for about 5-7 minutes, stirring every minute or so until nicely browned.


Next beat the eggs and half and half together.


After 10 minutes, take the crust out of the oven and place the sausage onto the crust. Remove the meat from the pan with a slotted spoon to leave any excess grease behind.


Now, simply pour on the beaten egg mixture and sprinkle the remaining cheese on top.


Put the casserole back into the oven now for 15 -19 minutes, or whenever the center is set and doesn’t jiggle when the pan is moved. Mine cooked about 19 minutes. The aromatherapy created while this dish is cooking gets everybody up and ready for breakfast. Dice up the tomatoes and basil – I used parsley because I had some on hand – then cut the casserole into squares and sprinkle a little of each on top.


You now have a substantial breakfast or brunch that’s also an easy-to-serve one-dish meal. Add coffee and some buttered toast, and your breakfast offering will rival any nearby café.

Can you do ahead and freeze for a later date???

You could adapt this recipe to make ahead of time and even freeze it, if necessary. You can make and bake the hash browns crust. Then add the browned sausage as the recipe states. I would freeze the egg dish at this point. Then when thawed and you want to bake it to serve for breakfast you could just mix up the egg mixture and pour over the top. The bake time might be slightly different but would not vary too much from the time listed in the recipe.

I added a dash of garlic pwd and 1/2 c spinach dip. My brunch friends loved it and asked for the recipe!

For all you know, I've been looking this kind of breakfast recipe for my family and there you are. For sure, my family will like it. But I will update you once I tried it. Thanks for sharing.

Sounds delish! The question I have is, can it be made ahead and frozen? Always seems to be a lot going on so if this can be made longer than overnite and frozen, that would be excellent!

The recipe is a real favorite! You can make this recipe ahead and then bake it just before you want to serve it. I would not suggest freezing the mixture but rather combining the ingredients as the recipe states and covering and refrigerating it overnight.
