Flatbread Pizza + Leftover Turkey = A Quick, Tasty Weeknight Meal

I don’t know about you, but one of my favorite things about Thanksgiving is the leftovers. Don’t get me wrong, I love the big "turkey with all the trimmings" dinner and I look forward to spending time with my family, but the leftovers are the best!

Thanksgiving finds my extended family gathered around the table at my parents’ house. My mom does most of the preparation, cooking and baking, while the rest of us do most of the eating! We do offer to help with the preparation but she sends us out of the kitchen telling us we are just getting in her way. Once the meal is complete I help with the clean-up which also includes the divvying up of the leftovers. My sister and I politely split the cornbread stuffing (a family favorite), any extra mashed potatoes and the homemade whole cranberry sauce. She usually gets the turkey carcass which will be simmered to make a rich broth she uses to make delicious soup. She takes a small share of turkey while I take a large share of turkey. I can hardly wait to decide what recipes I will make using this prize. Back when my boys were home I would often buy a turkey on sale after Thanksgiving to roast just so I could have more leftovers.

The weeks between Thanksgiving and Christmas are extremely busy. With decorating the house, getting cards addressed and mailed, shopping, wrapping gifts, attending concerts, etc. – well you know what it’s like. All of this activity is lots of fun, but lots of work too. This is the time of year when I look for easy, quick weekday meals to prepare and that’s where the leftover turkey comes in. A new recipe recently developed in the Land O’Lakes Test Kitchens features turkey and fits the bill perfectly, BBQ Turkey Flatbread Pizza.

This recipe only takes about 25 minutes before it’s on the table. Not only does it feature leftover turkey but I can also use my leftover cranberry sauce. And, if my son Kyle happens to stop by for dinner I know it will be a hit with him because it uses barbecue sauce. Once it’s on the table I feel like I am eating at a fancy restaurant – using flatbread for pizza crust. Who knew it could be so simple.

The recipe calls for flatbreads or naan (Indian flatbread). These are available in most grocery stores. I usually find them in the bakery or deli section of my store. Flour tortillas also will work.

The first thing I do is turn on my oven to heat to 400°F. While the oven is heating I like to prepare and measure out all the ingredients. Then once I start cooking the recipe comes together very quickly.

Place the flatbreads on baking sheets and bake for 5 to 6 minutes or until slightly crisp.
While the flatbreads are baking, melt the butter in a 2-quart nonstick sauce pan until it is sizzling.

Add the onions.

Cook over medium heat, stirring occasionally, until the onions are browned and caramelized. This takes about 8 to 10 minutes. I love the flavor of caramelized onions. They take on a rich, sweet flavor that forms as the sugars in the onions begin to brown – Yum!

Remove the onions from the pan and set aside for a few minutes.

In the same saucepan (why dirty another?) combine the cranberry sauce and barbecue sauce and heat through.

Spread the barbecue mixture over the heated flatbreads.

Top with the caramelized onions,

Turkey,

and cheese.

Bake for 8 to 10 minutes or until the cheese is melted and the flatbread is crisp. Sprinkle with chives. This just makes them look pretty.

Another thing I like about this recipe is you can adjust it to meet your family’s likes or dislikes. Everyone gets their own pizza so, maybe the kids would prefer no onions – no problem, just leave them off their flatbread. My guess is they’ll like the barbecue mixture and never guess that is has cranberry sauce added.
