I’m proud to call myself frugal. "Eating in" isn’t a punishment but an opportunity to try new recipes at a fraction of the cost of a restaurant meal. I love these Shrimp & Crab Potato Bites because they’re so versatile. They make a tasty appetizer, an elegant addition to a brunch buffet, or even a light meal when served with a salad. Nowadays, I enjoy finding ways to feel "rich" without spending "an arm and a leg." I wasn’t always so motivated.
My wedding anniversary falls at the end of February and my husband and I traditionally go out to dinner to commemorate the big day. I love all kinds of seafood, so it was a particularly great 10th anniversary we shared a few years ago when Rob surprised me with a quick trip to a sunny, sandy, southern city for some of the best meals of my life. Unfortunately, we returned to the astonishing news that Rob was out of a job. Not exactly the "welcome home" we anticipated.
After the initial shock wore off, we assured ourselves it would be a temporary setback. How long could this economic downturn really last? Uhhh…over a year, in our case. Plenty of time to practice all the ways to live well on a really, really tight budget. Now every meal was made at home, our garden grew to include more veggies and we spent weekends visiting free museums, camping in our backyard and playing lots of board games. Rob even became the coach for our kids’ sports teams—something he cherishes doing to this day. With the support of our friends and relatives, we managed to emerge from the ordeal healthy, happy and (mostly) sane.
While I’ll always believe winter vacations are wonderful, there’s no need for a tropical resort to enjoy the warmth of this indulgent treat. Don’t be "shellfish"— make these Shrimp & Crab Potato Bites and share them with your nearest and dearest.
To get started, assemble the ingredients and heat the oven to 425°F.
Combine the hash browns and melted butter in a mixing bowl.
Press the potato mixture into an ungreased 8-inch square baking pan. Then bake for 20 minutes.
Cut five slices of Swiss cheese into small pieces.
Next, mix together the crab, shrimp, chive-flavored cream cheese, ¾ c. of the Swiss cheese, egg, flour and pepper in a bowl.
Spread the mixture evenly over the warm potato crust and bake until the cheese is set, about 10-15 minutes.
Sprinkle with the remaining Swiss cheese and garnish with parsley before serving.
If you like spicy food, try them with a shake of hot sauce.
They’re great eaten warm or at room temperature. If I close my eyes I may even fool myself into believing I’m eating them at an oceanfront café…aaahhh.
