How to Make Perfect Scrambled Eggs

Scrambled eggs are a common and easy-to-make breakfast choice. But with a little bit of inspiration, you can add ingredients to make your own version of this breakfast favorite. The method is pretty straightforward. When perfected, you can become the next short-order cook, dishing up eggs that will get your family out of bed early.

Besides convenient to use, eggs are nutrition for family meals.  According to recently announced nutrition data from the United States Department of Agriculture's Agricultural Research Service, eggs are lower in cholesterol than previously thought.  The amount of cholesterol in one large egg is 185 mg., 14% lower than previously reported.  In addition eggs contain 41 IU of Vitamin D, an increase of 64% from 2002 values.  So let's get started with some tips for making perfect scrambled eggs: 

Use Best Ingredients
  • Use large, fresh eggs.
  • Use 1 tablespoon of milk or water for each egg that will be scrambled. Use low-fat milk to give the eggs a creamy texture.

  • One of the most important ingredients in scrambled eggs is air. By whisking with a wire whisk or fork, air is incorporated into the egg mixture and distributes the protein of the eggs. As the eggs cook, protein molecules firm up around the air bubbles. The result is a spongy, light mixture that could be described as “fluffy” scrambled eggs.
  • Well-beaten eggs are described as frothy and evenly colored. When your egg mixture matches that description, it’s time to stop beating. Over-beating destabilizes the protein molecules, resulting in eggs that are rubbery instead of fluffy.
  • Electric mixers or blenders can be used to whisk the eggs. Use a moderate mixing speed. It’s easy to over-beat if you set the speed too high. If you use a blender, the eggs can be blended for about 20 to 25 seconds. Set the mixture aside for a few minutes prior to pouring them into a hot skillet.

  • The size of the egg pieces (curds) will be dictated by how you handle the eggs in the pan. Gently stirring the egg mixture as it cooks or pulling a wooden spoon through the eggs as they cook will make for large, soft curds.
  • Some recipes say to stir the eggs with a wooden spoon as soon as the egg mixture is added to the pan. We suggest waiting until the eggs just begin to set, then you can start pushing the eggs around with a spatula. Push the eggs to the center of the pan while tilting the skillet slightly to let uncooked egg mixture flow underneath the egg mixture in the pan.

  • Assemble all the ingredients for the recipe so they will be ready when you begin cooking the eggs.
  • Chopped vegetables and or meats can be sautéed slightly first. Then the egg mixture can be added to the skillet and cooked as directed above.
  • Add the cheese at the very end of cooking or just before serving.
  • Suggested additions are
    • Chopped onions, bell peppers, other vegetables
    • Seasonings
    • Chopped ham or bacon pieces
    • Shredded cheese
