Nothing says "family" more in our home than a big Sunday breakfast! As a store manager for the local Home Depot, my husband Jeremy typically works crazy retail hours. Sunday, however, is the only day of the week when the girls and I have him all to ourselves. So to celebrate, we always make a family breakfast. Whether it's pancakes with sausage or biscuits with gravy, it's all about spending time together!
And while it may seem a bit unusual, our family's favorite breakfast is undeniably "Anyday Poached Eggs", with a side of country-style potatoes and plenty of holladaise of course. They even prefer poached eggs over pancakes! I'm thinking I've created little monsters...They better know how to cook for themselves when they move out, or they will have a very hard time! Good thing I still have plenty of time to teach them...
To begin, bring a pot of water to a boil. Just before you add the eggs, reduce the heat to low. You don't want the eggs to overcook. The water should be extremely hot but not boiling uncontrollably.
Before adding the eggs to the pot, prepare the English muffins or toast. I like to slice my English muffins in half and toast them until they're slightly browned. If you like, you can also butter them lightly to add extra flavor.
Now that the water is simmering and the muffins are ready, it's time to unveil the "star of the show." Gently crack your favorite eggs, one at a time, into a small dish. By doing so, it makes it much easier to add the egg to the water (and you know it'll be shell-free).
I used LAND O LAKES® All-Natural Eggs. And let me just say "Wow" up front. Not only are they good for my kiddos, they were also noticeably fresher and handled better overall during and after poaching.
Gently add each egg to the hot water, and allow them to poach for about 4 minutes.
After the eggs have poached for about 4 minutes, remove them one-by-one using a slotted spoon. If you're cooking for a large group (or a very large family), you can poach the eggs ahead of time and reheat them just before eating. To do this, poach the eggs for 2.5 to 3 minutes rather than 4 minutes. When you're ready to eat, gently place them back into the boiling-hot water for another minute or so to heat and finish cooking.
To help remove excess water, I allow the eggs to rest on paper towels for a few seconds.
Place each egg on top of a muffin and season with a little salt and pepper. We also like to add chives and plenty of hollandaise sauce! Yum! I can't wait until Sunday...
