Perfect Pancake Poppers!

I have the perfect anytime snack – Blueberry Pancake Poppers. We’ve had them for break-fast, a snack and even dinner! They’re tasty, pop-able and, basically, perfect. Recently, I made them for the boys for an after-school snack. I was a little preoccupied when I was making them, and accidentally put in the wrong ingredient! Need a laugh? Let me tell you about it.


The boys were off the bus and it was pancake popper snack time. They descended upon the kitchen like wild animals and ravenously started in on the poppers. Then I saw their expressions change. One boy looked at me, slightly unsure, and attempted to take another bite. From the other I got plain honesty. With a look of “I'm-going-to-die-if-I-take-another-bite” he said, "Mom, these are terrible!" The honesty door had been opened. The other one said, "Umm, yeah Mom, these taste pretty bad. Did you actually follow the directions? These aren't the normal pancake poppers!” After denying my failure, I tasted one. Nope. There is no way that I could have followed the recipe! So let me tell you how I remembered making these and how the boys and I were able to re-make a batch. They are so quick and easy.


My day was a bit crazy (just like any other mom in America). I had way too many things to juggle, and I place impossible standards on myself. Our family includes twovery active school-age boys and, in the last year, we added a kitten to the family. It has been said that dogs have owners, cats have staff. Meet Mr. President. Here he is “overseeing” us as we made the second batch of pancake poppers for breakfast.


It had honestly been a rough work day. There were miscommunications with clients, the weather was dreary and I had too many projects with unrealistic deadlines. I needed a small win, and baking usually improves my day. I love the smell of something baking in the oven! The boys are huge fans of mini muffins, and pancakes are a favorite of theirs – how could I go wrong with blueberry pancake poppers?


I preheated the oven to 350 degrees and prepped two muffin tins. I grabbed one of my "happy bowls." It's a fun blue color, and blue makes me happy. I poured in 2/3 cup milk.


In another bowl, I melted 1/4 cup butter in the microwave for about 12 seconds. I love that you can buy butter in half sticks – they are so easy to grab and use. I remember taking the butter out of the microwave because the kitten came flying around the foot of the island when he heard the door open. He threw himself at my legs as I walked the two steps from the microwave to the counter, and I almost tripped and spilled the entire bowl of butter on the cat.


Just then there was a ding signaling a text message from a co-worker. She needed to talk to me about a work project. No problem, I thought. I can multi-task this. I texted back that I could talk. I proceeded with making my recipe while waiting for her call.


The phone call came, so, while chatting on the phone, I added 1/2 teaspoon vanilla to the mix. I remember thinking that the batter was really starting to smell great. Just like pancakes! My day was getting better!


In the “happy” bowl, I added 1 1/4 cups all-purpose flour and 1 tablespoon sugar. I reviewed the next ingredients in the recipe and remember this part vividly because I was checking an email on my iPad. I set the iPad down and double-clicked back to the recipe on the website. I read, “2 teaspoons baking powder.” Aha! This is where I went wrong! Guess what? It wasn't baking powder; it was baking soda, the closest ingredient in my reach. In my multi-tasking, I grabbed baking soda by mistake. Baking soda will make the muffins taste awful. Trust me.


1/4 teaspoon salt goes in next. Stir the dry ingredients together before adding the wet ingredients.


Combine the wet ingredients with the dry ingredients.



Finally, I added 1/2 cup dried blueberries. These poppers can be made with almost any kind of dried fruit or berry. Feel free to substitute other fruit if you would like – other berries, apples, etc.



I sprayed the mini muffin tins with no-stick cooking spray. My day was still continuing at breakneck speed. The boys would be home in about an hour.  Next, I scooped the muffin batter into the pans. I like gadgets, so I grabbed the cookie dough scoop – it's the perfect utensil for adding the right amount of batter in the pans.



The muffins are in the oven! They bake about 10-12 minutes or until a toothpick inserted in the center comes out clean.


The pancake poppers are ready! Wait until you make these. The whole house smells like blueberry pancakes. After pulling the poppers out of the oven, it was time to glaze the tops with the remaining maple syrup. You can use a simple pastry brush to brush the tops.



I set them on plates ready for the boys for when they got off the bus! Success! Or so I thought. You already read about the boys’ reactions to my “mistake.” Lucky for me, the recipe is so quick and easy to make, we were able to quickly make another batch so the boys could have their after school snack.


You might also think that my boys would be sick of them the next morning. Nope. We made them again for breakfast! This time I sprinkled the tops with a little raw sugar and fresh blueberries.


Breakfast is served! Even Mr. President thought they looked good. I gave Bryce a quick reminder that Mr. President would not be joining him for pancake poppers – he has his own food. Bryce gave the kitten a quick hug before breakfast and told him, “Sorry, you have to eat cat food, Mr. President. These are for me and they are awesome!” You have to love a boy and his kitten.



We move to the breakfast table and breakfast is served! Blueberry pancake poppers fit for a king! Or for a teddy bear breakfast. (Yes, these pictures will be archived to use for high school senior day.)



“They taste just like blueberry pancakes! Can I take some for a snack today?”


“I’m way ahead of you, buddy.” The Blueberry Pancake Poppers are packed up so they can also be a school snack.



The boys love eating these. They are pop-able, made from scratch, and I know exactly what ingredients went into them. Victory! With my crazy days, it's laugh or cry. I prefer to laugh.
