Philly Cheesesteak Totchos

Have you ever had the urge to twist things up a little bit? Take a classic and make it over? Sometimes the same-old gets, well…old. Nachos are always a great standby appetizer, but what if you take the traditional nacho recipe and dress it up? That’s what we did with the Philly Cheesesteak Totchos. This recipe takes the deliciousness of Philly Cheesesteak sandwiches and combines it with potato tots for a new way to look at nachos. Who needs chips when you have tasty tots to serve the cheese steak filling over? Plus, this makes the perfect appetizer to serve while watching the big game.

Surprisingly, you really don’t need too many ingredients to make this knockout recipe: potato tots, vegetable oil, onion, red and green bell peppers, deli roast beef, American cheese, half & half and a little bit of ground red pepper to add some kick.

First, bake the potato tots according to the package directions, until they are nice and crispy.

While the tots are baking, heat the oil in a 10-inch skillet over medium heat. Add the onions and cook until they’re just beginning to soften.

Then, add in the pepper strips, cooking for a few minutes until they start to brown.

Stir in the chopped roast beef to combine and remove from the heat.

Now, make the cheese sauce. This is the star of the show, my friends. Combine the cheese, half & half and your desired amount of ground red pepper in a saucepan. I chose to use a little more ground red pepper because I like the added heat.

Stir over medium-low heat until the sauce is melted and smooth.

When the sauce is melted, arrange the tots on a serving platter, and pour some of the cheese sauce over the top.

Then top with the roast beef mixture…

…and a little more cheese sauce.

Make sure to serve the dish while it’s still warm — it’s best that way. Plus, let’s face it — it’s not going to stick around long enough to get cold when everyone is fighting over who gets more.
