A day off from school and the thrill of summer break only weeks away—the perfect time to bake cookies! With Taylor Swift blaring in the background, my teenage daughter and her best friend set about to make some Snickerdoodles all by themselves. I knew it was an easy recipe, and their experience confirmed it.
To begin they gathered their cookie ingredients, including measuring the flour by scooping it into the measuring cup and leveling it off. Normally I run the blunt edge of a butter knife across the top of the measuring cup, but their spoon method worked just fine.
To make the cookie dough, all you do is put all the cookie ingredients into a mixing bowl …
… and mix. Start slow so you don’t get a face full of flour; the girls had a little flour flying out and decided it was time to put on aprons!
Remember to use a spatula and scrape the bowl once or twice to make sure everything is incorporated. After just a couple minutes of mixing, the dough comes together and pulls away from the sides a bit.
Next, put the sugar and cinnamon in a small bowl. Pretty easy with two bakers working at once!
Then, mix it all up. They make it look so easy!
Now, it’s time to roll the dough into 1-inch balls and then roll in the sugar mixture. (I was going to say this was their favorite part, but I don’t think it topped actually eating the cookies!)
To make sure they get plenty of sugar and cinnamon, the girls spooned a little extra on top! This is not necessary – just rolling the dough balls in the mixture will create the desired effect.
As the cookie sheets fill up, pop them in the oven for 8 to 10 minutes. They did a great job keeping the dough balls 2 inches apart – an important step as they do spread out during baking.
When the cookies came out, they looked amazing! (They both had their eye on that one with extra cinnamon sugar …)
After a minute or so, remove them to a cooling rack. Zoey was quick to say, “Don’t you think we should try them right away to make sure they’re not poisonous?”
After testing a couple, they both agreed they were indeed not at all poisonous and were in fact the best snickerdoodles ever. Crisp on the outside and chewy on the inside. “Tastes like cookie dough on the inside!” they exclaimed. Their batch netted about 4 dozen, which is less than the 5 dozen noted on the recipe, so the cookies could be made a little smaller if you prefer. Still, they worked great and there were plenty to share with friends and family.
