It’s a Wednesday night and I’m driving home from work, all the while thinking about how hungry I am and how quickly I can get home and eat dinner. I call Ryan to check in while I’m driving – like we always do – and he announces that his brother, Kyle, and Kyle’s girlfriend, Steph, are coming over for dinner. "Tonight?" I say, trying not to sound panicked. "Yeah, I was just talking to him and since he’s house-sitting right by our place – and he and Steph were already going to hang out tonight – I told him that they should just come over for dinner." Yes, we have an open-door policy, but usually I have more than twenty minutes notice when I’m going to be preparing dinner for guests. Well, at least it’s family! We’re gonna wing it.
Enter the Barbeque Chicken & Coleslaw Wrap recipe. It was the quick meal I already had planned for Ryan and myself so we could eat after work without it getting too late. As it turned out, the wraps (along with some fruit and a side of corn) were plenty of food to feed the four of us and I even made myself another wrap for lunch the following day! Plus, you can easily build your own, so it requires less work to get everything on the table. It gave us plenty of time to catch up with Kyle and Steph – without our growling tummies getting in the way.
Here are the ridiculously simple steps to prepping for your Barbeque Chicken & Coleslaw Wraps:
Shred a rotisserie chicken into a medium-sized bowl. The things I love about using a rotisserie chicken are these:
1) I don’t have to do any of the cooking!
2) I can be as selective as I want about which meat to use and which parts to toss (I’m a little picky about that).
Add your favorite barbeque sauce and mix the chicken up so it gets evenly coated.
Warm up your tortillas for a few seconds in the microwave, then layer your wrap ingredients. Start with the lettuce. We actually used a bag of spring greens for our "lettuce" just because the darker greens are a better source of vitamins and iron. Layer the barbeque chicken on next.
Spread a ¼ cup of deli coleslaw on top of the chicken (it will give some nice crunch!), followed by your halves of Land O’Lakes Deli American cheese.
Fold the edges of the tortilla over the filling, then secure the roll with a toothpick.
Serve your Barbeque Chicken & Coleslaw Wraps and you have a perfect (speedy!) summer dinner to satisfy all.
