It’s a special day in my house today! We are celebrating our 8th wedding anniversary! Luckily, I have a husband who remembers every detail, special occasions and favorite flowers of distant relatives. They say that complete opposites attract...I didn’t forget my anniversary, but I’m not known for my awesome planning abilities either.
SO, here it is on a week night (with soccer practice, homework and school tomorrow) and I NEED a special dinner FAST. In my house, nothing says "fancy dinner" more than shrimp. We love it, but it’s just not something we eat all the time. So time to jump to the website and look up quick meals with shrimp. Take a look what I found! Zesty Lemon Shrimp & Pasta. Definitely worthy of an anniversary dinner. Let me show you how easy this was to make and of course, it tasted incredible, too!
I began by melting 2 tablespoons of butter in a large skillet. I added the garlic…
The best part is that the only real "prep" was thinly slicing 1 medium red pepper. It measured about 1 cup of slices.
It’s a happy occasion at our house when I find great meals that are quick to make!
Cook the peppers over medium heat until tender, but still crisp. It takes about 2 to 3 minutes.
At the same time, I am able to boil water and start cooking the penne pasta. Cook the pasta according to the directions on the box. It takes about 6 to 7 minutes to cook the pasta.
Back to the skillet to add 1/2 pound of cooked, peeled and de-veined shrimp. To keep costs down, you can purchase smaller shrimp or even frozen shrimp. It tastes the same and it is less expensive!
Add 3 tablespoons of lemon juice. Stir occasionally until the shrimp start to turn pink. This only takes 1 or 2 minutes - so don’t walk away from the pan!
Toss in your cooked pasta.
Now zest a lemon. My zester is a handy tool when I want to get very fine shreds of lemon, orange or lime. In this recipe I use ½ to 1 teaspoon of zest. If you don’t have a zester, just use a grater with small holes.
Toss lightly, add salt and pepper to taste and this special dish is ready to serve!
The recipe called for some chopped fresh parsley, but I decided to leave it out. I didn’t dare leave off the freshly grated parmesan cheese though...It makes it look like you went the extra mile and it tastes amazing!
Just like the recipe says 15 minute prep time, 20 minutes total time. Boo-yah!
Another benefit of this meal (besides being insanely healthy) it was quick to clean up! There are a few ingredients to put away and minimal dishes to do so we could enjoy the rest of our evening. Zesty Lemon Shrimp & Pasta tasted divine! Definitely a great anniversary meal worthy of receiving gifts of flowers, jewelry and compliments!
