My mom is Irish and LOVES her potatoes. You wouldn’t believe it by looking at her – she’s a thin little momma! – but potatoes are her weakness. Hash browns, French fries, baked potatoes, mashed potatoes, cheesy potatoes, potato chips. You name it, she loves it.

All three of my kids have been in sports and most recently my daughter was one of the swim team captains. Over the years, I have worked on multiple "carbo-load dinners."

Here, in the Test Kitchens at Land O’Lakes, there are a handful of recipes that we all seem to go to over and over again. Double Fudge Cream Cheese Brownies is one of those recipes. This recipe was developed back in the 80’s for a cookbook. It was a hit then and its popularity has just continued to grow.

By day, I am a graphic designer. This means that I fine-tune headlines, and combine colors, imagery and fonts to help people understand information better. I love it! It takes both sides of my brain to be creative and practical at the same time.
