Grilling Peaches in the Great Outdoors

In my immediate family, the girls outnumber the boys, two to one. The ratio has evened out quite a bit since we’ve become adults and most of us are married. But, growing up, we girls always had the boys out-voted on any activity, so those guys had to stick together! That’s why sixteen or so years ago, my dad and my brother Dan began an annual tradition: a “dude’s” weekend camping on the St. Croix River. This has been a summer highlight for them nearly every August since.

But, growing up, we girls always had the boys out-voted on any activity, so those guys had to stick together! That’s why sixteen or so years ago, my dad and my brother Dan began an annual tradition: a “dude’s” weekend camping on the St. Croix River. This has been a summer highlight for them nearly every August since.

When it began, Dan was only in grade school. Now he has grown up, married a very non-camping-type of woman (a girl after our own hearts!) and is now expecting a little baby of his own. The “guy code” doesn’t allow me to know too many details about their wilderness adventures, but what I do know is that it involves canoeing, hiking, great heart-to-hearts and a lot of time around the campfire.

Of course, when you send a couple of guys out into the woods for a weekend, they are probably going to eat things like roasted hotdogs, granola bars and PB&J. But, I just discovered a dessert that could completely elevate their campfire meals: Grilled Caramel Peaches. Here is why it needs to be on the menu this summer when dad and Dan hit the road: 1) August is peach season. 2) Dad loves fruit. 3) The guys get to play with fire. Need I say more?

Note: for the bug-adverse like me, these Grilled Caramel Peaches can also be made on your nice little grill at home (and you can sleep in your own bed afterwards!).

The recipe says it makes enough for four people. I’m going to respectfully disagree. These are tasty and you’re going to want to eat your own pocket of caramel goodness. So, start by tearing two 12-inch squares of aluminum foil per person. Dad and Dan: for you, that means four total.

Slice one fresh peach per person (or use one cup of frozen peaches per person). Divide them evenly onto two pieces of foil.

Grilling Ingredients

Mix together 1/4 cup brown sugar and 1/4 teaspoon cinnamon. (You can prep this in advance of your trip – just put the mixture in a sealed plastic baggy or plastic container that you pack along.) Sprinkle the cinnamon/sugar mixture on top, again dividing as evenly as you can between the two packets.

Place a tablespoon of softened butter into each peach pile.

Layer a second piece of foil on top of each, creating a little foil-peach sandwich.

Wrap in Foil

Fold each edge over twice so you have a tight little pocket. Do you have two packets of peaches now? Place them on a medium-hot grill and cook for 8 to 10 minutes, turning once. The peaches will be tender and the cinnamon sugar is making a sweet caramel sauce in there.

Remove from the grill and transfer to a bowl. Drizzle a little half & half over top and devour!

Drizzle with Ice Cream

For more of a peach cobbler-type flavor, sprinkle a little granola on top. Or, if you’re really going crazy (and have access to a freezer – sorry boys!), enjoy these with a little vanilla ice cream.

I know it doesn’t make up for all of the girly movies we made you come to, guys, but maybe a tasty campfire dessert helps a little bit?
