Pineapple + Pollo (Chicken) = Perfecto!

  Fresh. Summery. Simple. Yummy! These are the words that came to my mind when I took my first bite of this fabulous Glazed Chicken with Pineapple Salsa.  Did I mention that it looks gorgeous on a plate?

Fresh. Summery. Simple. Yummy! These are the words that came to my mind when I took my first bite of this fabulous Glazed Chicken with Pineapple Salsa.  Did I mention that it looks gorgeous on a plate?

First, heat up your outdoor grill.  If your grill is the charcoal variety make sure the coals are ash white before grilling. If you use a gas grill, make sure it is heated up to Medium.  I used a gas grill and so it was ready in a matter of minutes. You'll be glad when it's ready, so you can get to the good part faster - eating!

Now for the salsa - I’ll be the first to admit that I was a skeptic. I love food with Latin flair, but fruit salsa? Really? Much to my surprise, this ridiculously easy topping sealed the deal on this meal for me! I was so pleasantly surprised by the fresh flavor the salsa added, I wished that I had made twice as much! So mix together all of the salsa ingredients (I stirred mine in a plastic container so I had a lid ready to seal it up), then refrigerated it until serving time.

*Tip for you newbies like me: I wasn't sure if  "apple jelly"  was a super-special baking ingredient since I had never used it before, but it turns out that you can find it with the other PB&J ingredients in the regular jelly aisle.

Pineapple Salsa

Combine the apple jelly you set aside for the glaze and LAND O LAKES® Butter in a small  microwave-safe bowl and heat on high until melted (about 20 seconds). Add the lemon juice, cumin and garlic powder, then stir thoroughly.

Glaze

Now is the time to put that grill to work (and enjoy that beautiful summer weather!). Place the chicken breasts onto the grill and liberally "paint" the glaze onto the exposed side.

Grill until lightly browned, then flip the chicken to brown the other side. Glaze occasionally as the chicken absorbs more of the mixture. When the chicken in no longer pink in the center and the temperature reaches 160° F.,  it's ready to be removed from the grill.

Grilling

Serve the chicken with a dollop of salsa on top, or keep the salsa on the side for guests to add their own.
