There are a wide variety of recipes in which Land O Lakes® Half & Half works very well. Recipes from soups, beverages and sauces to frostings and in baking recipes such as muffins, scones and desserts are excellent ways to use half & half. The result is a light tender crumb texture in a muffin and a creamy rich texture in soups.
Can I substitute Land O Lakes® Half & Half for heavy cream or whipping cream?

It is best to use the cream product called for in the recipe. Sometimes half & half may be substituted successfully for whipping cream in sauces, soups, batters, puddings, and fondues although the consistency of the finished recipe may be thinner or less rich. Half & half should not be substituted for whipping cream in ice creams and other recipes that require a higher amount of milk fat, or for whipping.

This product requires refrigeration. For best results date by the date stamped on the package. Once opened, the half & half should be used within 7 to 10 days.
We do not recommend freezing half & half. Freezing does not affect the safety or nutritional value of the product, frozen-then-thawed product may affect texture and/or taste. We do not guarantee the quality of our products if stored frozen.

Sometimes the acid in coffee along with the coffee’s heat may tend to curdle the cream when it is added to coffee if the cream is not fresh. To prevent this from happening, be sure to use fresh cream.
Is light cream the same as half & half?

No, light cream is not the same as half & half. Light cream, sometimes called coffee cream, may contain from 18 to 30% milkfat, but most often contains 18 - 20% fat. Traditional half & half contains 10 to 18% milkfat.
