We agree that breakfast is important, and it’s very kind of you to help your grandson slow down enough to eat something healthy. Muffins are a wonderful option — they’re easily portable and can be loaded with whole grains, fruits, and even vegetables such as zucchini or carrots. Try Blueberry Cornmeal Muffins, Good Morning Muffins or simple Chewy Granola Bars, they are easy to enjoy in the car or on the walk to school.

When my boys were young, we often packed homemade snacks for breakfast or treats during the day. When you make them yourself, you avoid the preservatives and fillers sometimes found in packaged products. Plus, they’re fresh, delicious and full of love.

Saunter in with a Breakfast Scramble Wrap — jazzed up scrambled eggs served in a warm tortilla with a little salsa sour cream — and you’ll score big. Surprise her with a Cheesy Denver Breakfast Skillet— a classic made even better with refrigerated hash browns, peppers, ham and eggs. Try a simple egg dish. Eggs cook fast on the stovetop, but they’re even better in delicious frittata dishes such as our Fresh Tomato & Asparagus Frittata or Zucchini Tomato & Cheese Frittata. You can even prep the vegetables the night before, and then toss them together in the morning with fresh eggs for a quick, elegant and satisfying meal. Our tasty Overnight Sausage Strata is also a sleepsaver. Make the strata the night before, and in the morning, just bake for 40 to 45 minutes.

In case your guests beat you to the kitchen, leave some fruits and juice handy, and set out ground coffee and a filter. Let them know they can help themselves and everyone will feel right at home!

Easy Sleep-in Send-off Snickerdoodle French Toast

Grandpa Pat was visiting for a few days and we had only a few hours in the morning before we had to drive him to the airport. I wanted his final breakfast with us to be special, but I just hate getting up early on the weekend! Crunchy Snickerdoodle French Toast was a perfect fit. It is made the night before and baked crunchy in the oven in the morning.

A Holiday Tradition:  Cinnamon Spiced Yeast Bread Called Pawmaw’s Coffee Cake

There are a number of traditions in my family, but one is close to sacred. That tradition involves a special yeast bread or coffee cake made originally by my grandmother and now made by my mother. This coffee cake is served at our casual family Christmas Eve supper. Then, the leftovers are served the next morning for Christmas breakfast. The only name we have ever used for this special pull-apart type bread is Pawmaw’s Coffee Cake.
