Mini Mexi Bites add a Little Spice to Brunch

Weekends are a great time to wind down and enjoy something out of the ordinary, like Mini Mexi Bites.  It seems that our weekday breakfasts rely too much on toast and cereal and fast scrambled eggs.  A little fun and variety makes sense on a Saturday when we’re not in a rush.  In fact, we often eat later in the morning so we usually make it a brunch.  This recipe is quick, easy, and outrageously good.  And the mini size is fun, too!

My husband has been known to say that March is the best month of the year - due to "March Madness," the beloved college basketball competition (and perhaps the fact that his birthday falls during that month). And while I have already confessed to the blogosphere that I am not much of a sports fan, basketball is my favorite of all to watch.

Girls' Night Special...Artichoke and Jack Dip with Pita Chips!

There's nothing more fun than getting together with some of your closest girlfriends for a Girls' Night.  Since all of my closest friends are moms, we rarely have the opportunity to get together.  But when we do, it's a blast!  A little music, some wine, great conversation, and plenty of munchies is all it takes to make us happy!

  I have always adored shrimp.  Even as a child I loved shrimp.  I remember going out to “fancy” restaurants as a young girl with my grandparents and I always ordered shrimp.  Oh, and then there are artichokes; another favorite of mine.  I was fortunate to grow up in a family that ate a wide variety of foods – including artichokes.  And, cheese – who doesn’t love cheese?

Who could believe it is possible to create an easy and flavorful gourmet pizza in just a matter of minutes? Actually, I have made this pizza a number of times since I first tasted it during recipe testing in the Test Kitchens. The flavor was incredible and I knew right away it would be a recipe I would serve my family and friends. That is what I have done – three times to be exact.

Mini Burgers That Pack a Punch!

These kickin’ little burgers are a cinch to prepare and perfect for summer appetizers or hors d’oeuvres parties. I had never heard of adobo sauce before this challenge, but I’m definitely a believer now. While the flavor of the chilies gives some heat, it’s mild enough that there will be no complaints from kids.  The hubby liked them so much that he requested that we give the recipe an encore – next time making full-sized burgers so they could get center stage!
