French Toast on the Go

When I think about French toast, I can picture myself as a grade-school-aged kid in my aunt and uncle’s crazy-busy kitchen. I’m wearing my PJ’s, swinging my feet from the bench seat at their kitchen table, and there is breakfast chaos all around me.

It's so easy nowadays to give up on nutrition for convenience, so I really admire your desire to want something healthy for your kids. Greet them in the kitchen with something fresh from the oven -- Chocolate Chip Banana Muffins are moist, delicious and have fiber, too -- or have them help skewer up Fruit 'N Cheese Dippers. We agree that breakfast is important, and it’s very kind of you to help your grandson slow down enough to eat something healthy. Muffins are a wonderful option — they’re easily portable and can be loaded with whole grains, fruits, and even vegetables such as zucchini or carrots. Try Blueberry Cornmeal Muffins, Good Morning Muffins or simple Chewy Granola Bars, they are easy to enjoy in the car or on the walk to school.

When my boys were young, we often packed homemade snacks for breakfast or treats during the day. When you make them yourself, you avoid the preservatives and fillers sometimes found in packaged products. Plus, they’re fresh, delicious and full of love.

I love to dig into a good book, and over the years I’ve found friends, family and co-workers who feel the same. We share laughs, our ideas and our recommendations. And though it’s fun to discuss books casually, this love of reading has often made me wish that I could be part of an official book club. The opportunity just never arose… until now.
