Big Batch Fudgy Brownies for Impromptu Guests

I recently had some friends staying with me during the holidays. They have a son who attends the same college as my son, Kyle. Both boys are living off campus this year and so did not “come home” for their holiday break. The college closes for the two week break which meant they could not eat on campus as they would normally. So they joined us for dinner on more than one occasion over the two-week period. One night I decided to make an easy dessert I knew they would like. Brownies was the obvious solution.

Making a pan of homemade bars is a great way to showcase your baking skills. And, since recipes can be adjusted to fit different sized pans, they’re perfect for almost any occasion.

Try a simple egg dish. Eggs cook fast on the stovetop, but they’re even better in delicious frittata dishes such as our Fresh Tomato & Asparagus Frittata or Zucchini Tomato & Cheese Frittata. You can even prep the vegetables the night before, and then toss them together in the morning with fresh eggs for a quick, elegant and satisfying meal. Our tasty Overnight Sausage Strata is also a sleepsaver. Make the strata the night before, and in the morning, just bake for 40 to 45 minutes.

In case your guests beat you to the kitchen, leave some fruits and juice handy, and set out ground coffee and a filter. Let them know they can help themselves and everyone will feel right at home!

A Little Taste of Africa on a Chilly Minnesota Weeknight

Now that it’s January, my slow cooker has become my best friend. Our house is chilly and I find myself wearing a scarf and felted wool slippers. This new recipe for African Chicken Peanut Stew seemed just right for a chilly Minnesota weeknight. I was working from home for the day and this stew only needed 4 hours in the slow cooker, so I made it mid-day. I love the feeling that dinner is already done!

We wholeheartedly agree that you should enjoy your own parties! If you're relaxed, having fun and watching the game, others will be, too. Offer up some impressive yet simple appetizers -- like our crispy Cajun Potato Wedges, spicy Deviled Nuts and zesty Old English Cheese Spread served with pretzels for dipping. Artfully arrange everything on a table so your friends can help themselves, and let the game begin!

Easy Sleep-in Send-off Snickerdoodle French Toast

Grandpa Pat was visiting for a few days and we had only a few hours in the morning before we had to drive him to the airport. I wanted his final breakfast with us to be special, but I just hate getting up early on the weekend! Crunchy Snickerdoodle French Toast was a perfect fit. It is made the night before and baked crunchy in the oven in the morning.

After a strenuous workout, lunch should be easy. Slow cooker dishes are a great way to have a hearty meal ready right away. Create your own taco bar with Make-Ahead Fajitas.
