Here Comes the Bride Bars

Big changes are in store for my family: this spring my younger sister will marry her high school sweetheart. Then in the summer, our brother and his girlfriend will tie the knot. Two weddings in four months! Crazy, right? These weeks of preparation have been hectic with planning and jam-packed with parties. We have so much to celebrate!

It's so easy nowadays to give up on nutrition for convenience, so I really admire your desire to want something healthy for your kids. Greet them in the kitchen with something fresh from the oven -- Chocolate Chip Banana Muffins are moist, delicious and have fiber, too -- or have them help skewer up Fruit 'N Cheese Dippers. It’s amazing what you can find when you clear away the clutter! Your friends will enjoy you sharing your new space with them, almost as much as they’ll enjoy simple, light appetizers like Coconut-Orange Fruit Dip and Cucumber Dill Bites. Ham It Up After Easter

I love a nice bone-in ham for Easter dinner, but we always have a lot left over. Of course there are ham sandwiches, and omelets with ham and cheese, but when you tire of those it’s nice to have another option or two. I found this Ham & Veggie Pasta with Swiss and it was a perfect, easy way to use up some ham and make a great meal.

Asparagus adds intrigue and delicate flavor unlike any other. Try these three recipes to expand beyond savory soups.

Start your Saturday with a lovely Potato Asparagus Frittata sprinkled with fresh green onions and parsley. Add Spring Vegetables with Lemon Dill Butter to your lunchtime fare. For dinner, add interest to simple roast chicken breast with a side of Szechuan Asparagus & Red Peppers, sautéed and spicy with chopped garlic and ginger.

Get Crafty with Simple Spring Baskets

With my wedding date fast approaching, there are so many little details that need to be finished up. A couple weekends ago, we finalized the bridesmaid dresses. I was able to spend some time with most of my bridesmaids, which was fun since we don’t usually get to all be in the same place at once. All in all, it was a great weekend, but then I realized the only member of our bridal party (that lives within driving distance) that I had not seen that weekend was our ring bearer, Cade.

A Taste of the Tropics – Coconut Lime Layer Cake

During March my son Kyle and I joined friends on a cruise of the Mexican Riviera. It was a wonderful escape from the snow and cold of Minnesota. While on the cruise I enjoyed taking a tour of the ship’s kitchen. It was during the tour that I discovered that most of the beautiful and delicious desserts served on board were actually made from scratch right there on the ship.

Holiday meals are always special, but they needn't be predictable or complicated! We suggest a simple brunch of Broccoli & Mushroom Frittata, Maple Glazed Canadian Bacon and a basket of freshly-baked Peach Yogurt Muffins, served warm and offered with butter.

Decorate the table with a pastel colored tablecloth and napkins, pour coffee and orange juice, and let the conversation begin.

Try Black-Eyed Pea & Pasta Salad, a light pasta salad with a flavorful sweet and spicy lime jalapeno dressing. Complement that with Savory Breadsticks embellished with herbs, followed by Turtle Thumbprints (chewy caramel chocolate cookies) and ice cream. Perfect!
