How wonderful of you to think ahead to help your son transition to cooking in college. Along with the long study hours, he'll get a smaller kitchen and start managing his food choices. For many of us, college became an endless menu of boxed mac and cheese, pizza, and canned soup.

What a gift to share some recipes to get him started.  If he's a pasta fan, he can't go wrong with Spaghetti Skillet Dinner. The Hurry-up Ham and Cheese Skillet is perfect for a quick dinner. Finally, the Skillet Chicken and Potato Dinner is a hearty meal he can even share with his roommate. These three meals are incredibly easy and quick, and they can all be made in a single skillet to help with that other college challenge - clean up! You'll feel better knowing he has some healthy choices to mix in.

A Stackable Lunch

by Kim August 23, 2011
A Stackable Lunch

This is a big year for us – we are sending our oldest child to kindergarten. It’s hard for me to believe that he will be at school making decisions for himself without me hovering over him.

Congratulations on your new job! Your years of lunchbox experience will make you a pro at packing these simple, delicious sandwiches for the office. They're full of grown-up flavor, and are a snap to make and take.

California Veggie Wraps feature fresh avocados and tomatoes with salsa and sunflower seeds in a whole wheat tortilla. A hint of jalapeño combined with crisp peppers and pineapple adds excitement to this classic Ham with Swiss Cheese Sandwich. For a Mediterranean twist, try sensational Zesty Turkey Pesto Sandwich served on a bun spread with lively pesto.

Packing your lunch is so simple and convenient that you may be looking to expand your repertoire with even more great sandwich recipes. Find easy, flavorful recipes that are ideal for office lunches by visiting Sensational Sandwiches.

Best wishes for success!

Now that you have spent time remodeling your kitchen, you'll definitely want to spend some time using it! One-dish meals are a perfect entrée into cooking, and the variety of ingredients often means a colorful and nutritious dish as well. Try any of these tasty chicken dishes like the Calico Chicken with Penne, the versatile Pepper Chicken Pasta and the mouth watering Ranch Chicken and Rice Bake. Offering a tossed green salad or a special beverage – maybe fresh-squeezed lemonade or fresh-brewed iced tea – are other ways to make the meal extra special without extraordinary effort.

Enjoy your new kitchen!

Try a quick tortilla roll-up with these El Paso Tortilla Wheels. One batch makes five dozen bite-sized snacks. Fruit 'n Cheese Dippers with a yogurt-honey dip are certain crowd pleasers. Or, offer a little Hawaiian flavor with these tasty Pineapple, Ham and Swiss Appetizers. Any of these will keep Aunt Marge nibbling and chatting for hours on end, and give Uncle Henry a little something to eat while he waits, and waits, and waits.

Your question really hits on something that we all grapple with on hot, hot days. Nothing makes a better dinner this time of the year than a chilled, refreshing entrée salad with a flavorful dressing! The Summer Fruit and Ham Salad combines good salty and sweet flavors while this Jazzed-Up Deli Pasta Salad takes pasta salad to the next level. Good meats from your local Italian deli will make the Italian Pizza Salad a repeat request from your family.

Another great summer treat is to grill extra chicken, shrimp or steak whenever you're grilling; then simply refrigerate for use in the next day or two. When making a salad, add the grilled meat to a pasta or green salad for a delicious, smoky flavor (and less time in the kitchen!)

Stay cool and enjoy the rest of your summer!
