For St. Patrick’s Day, I enjoy making a traditional corned beef and cabbage dinner for the family. We’re not Irish, but when you live in Saint Paul, MN — a very Irish town that celebrates with a parade and all sorts of festivities — it just feels right to have a little fun around this holiday. My family loves having breakfast for dinner. Whether it’s scrambled eggs and bacon or pancakes, it’s always a hit. When I’m at a loss for what to make for dinner and ask the boys what they would like, they often request “breakfast.

Family Game Night is always a hit in our home! Whether it’s a game of UNO, a little Yahtzee, or guitar battle on the Wii, we enjoy every minute of family time we have. But what do you serve a houseful of starving kids? Mac ‘n Cheese? Been there, done that. Read the rest of this entry »

I love to take Friday afternoon off work, stay home to clean the house and prepare a special meal for the family. For a mom of a pre-teen and a young teen, being all alone in a quiet house is a rare treat. I get to choose the music, and I make tea while I clean, cook and bake. When I saw the Pineapple Rum Tart featured on the web site, I decided to try it. The recipe was simple, yet the presentation was fun and festive — a perfect way to kick off the weekend! I am a total sucker for thin-crust Barbequed Chicken Pizza on a weeknight. It takes me to a happy place where work is over and relaxation begins. And sure, you can buy the frozen stuff, but then you don’t get to add your favorite extras (more mushrooms, please!) and you certainly don’t feel like you can serve it to guests. But homemade pizza? Now that’s what I’m talking about! Read the rest of this entry »

Winter seems never ending at this point, so coming home to the wonderful aroma of slow-cooker fajitas was just what we needed this week. And, we’re getting ready for a winter trip to Mexico, so a little spice seemed apropos. These Make-Ahead Fajitas are incredibly easy! Read the rest of this entry »

I mentioned some time ago that I have new neighbors. The young couple, Kirby and Annie, who moved in down the block, went to college with my son Ryan and his wife Amanda. I am excited to have them in the neighborhood and am really excited about their new addition – a beautiful baby girl. Kendall was born on February 5. Read the rest of this entry »

The very first winter that Ryan and I were married, we were loving having our own place and were anxious to do some entertaining, so we decided to throw a couples party. Of course, the only cooking we really knew how to do was grilling… and in the dead of winter in Minnesota that may sound a little crazy. But we are young, so crazy is what we do. With that idea - and basically no cooking skills - the annual “Burg-a-lation Celebration” was born. Read the rest of this entry »

With the craziness (and expense) of raising four children, my parents usually celebrated Valentine’s Day with a special meal at home. The most vivid recollection I have of this was when I was in middle school - the year that my mom arranged for us kids to be the chefs and servers. Read the rest of this entry »
