15 Chicken Recipes in 15 Minutes (More or Less)

Thank goodness for chicken. When I need something fast, I think of chicken. When I’m looking for a versatile backdrop for big flavors? Chicken is perfect. When I need something that will satisfy the adults and the kids at the table? That’s right. We all love chicken.

And I know I’m not alone. (Did you know that the average American eats more than 80 pounds of chicken every year?) So, I started thinking of all the ways my family takes this dinnertime staple and mixes it up, makes it a little special—but still very doable on a busy weeknight. We love to bring in flavors from around the world, and we love dishes that can be customized for every dinner, so you’ll see a lot of those.

What I want to give you here are ideas, sparks, pushes in the right direction, rather than full recipes. Then you can take each idea and make it the way your family will love. A note on timing: These dishes can be assembled in about 15 minutes if you already have your chicken cooked. For me, that might mean picking up a rotisserie chicken at the grocery store, or it might mean keeping cooked chicken breasts and thighs on hand in the freezer. Sauté Express® Sauté Starter is a great way to flavor meat as you cook it—and then there’s so much you can do with it.

15 Chicken Recipes in 15 Minutes (More or Less)
1. Chicken Tostadas - Sauté bite-sized pieces of chicken in Garlic & Herb Sauté Express® Sauté Starter. Layer chicken, heated black beans, corn salsa, and sour cream on crunchy tostada shells—or add your favorite Tex-Mex toppings.
2. Chicken Ciabatta - Layer pan-fried chicken, fresh basil, roasted red pepper and sliced mozzarella on toasted ciabatta rolls. Broil for two minutes.
3. Chicken Tortellini - Cook refrigerated or frozen tortellini according to package directions. Toss with cubes of cooked chicken or shredded rotisserie chicken, artichoke hearts, shredded parmesan cheese, and sundried tomatoes.
4. Orzo Chicken - Cook bite-sized bits of chicken in Lemon Pepper Sauté Express® Sauté Starter, mix with cooked orzo and peapods, and garnish with feta cheese. 5. BBQ Chicken Sandwiches - Shred rotisserie chicken meat. Mix with your favorite bottled barbecue sauce. Sandwich it inside sliced potato rolls.
6. Warm Chicken Salad - Cook strips of chicken in Garlic & Herb Sauté Express® Sauté Starter. Place warm chicken on a bed of mixed greens and top with walnuts and feta cheese.
7. Chicken Fajitas - Cook strips of chicken, onions, and peppers, in Garlic & Herb Sauté Express®
            Sauté Starter. Wrap in a warm tortilla, along with shredded cheddar cheese. Top with peach salsa.
8. Chicken Banh Mi - Slice six-inch sections of baguette lengthwise. Layer with shredded rotisserie chicken, shredded carrots, julienned or sliced cucumbers, and sprigs of cilantro. Sprinkle with soy sauce before closing your sandwiches.
9. Chicken Tacos - Cook ground chicken in taco seasoning mix. Fill a taco shell with warm chicken, avocado, pico de gallo (or your favorite salsa), and sour cream with a little chipotle chili powder stirred in. 10. Buffalo Chicken Pizza - Spread prebaked pizza crust with a mixture of ranch dressing and hot pepper sauce. Top with bite-sized pieces of cooked chicken, crumbled blue cheese, and sliced onions. Bake at 400°F for 8–10 minutes or until heated through.
11. Chicken-Topped Potato - Combine shredded rotisserie chicken and prepared barbecue sauce. Top a split, baked sweet potato.
12. Chicken Nuggets - Crush about 2 cups of corn flakes. Stir together 2 tablespoons dry ranch dressing and 1/3 cup melted butter. Dip one-inch pieces of chicken in the butter mixture and then in the corn flakes. Bake at 400°F for 8–10 minutes or until chicken is done.
13. Asian Chicken Soup - Bring to a boil 2 cups of water, two cans of chicken broth, 1 inch of fresh ginger (sliced into rounds), 1 tablespoon fresh garlic (minced), and one long stick of fresh lemongrass. Add angel hair pasta, shredded rotisserie chicken, a handful of cilantro, sliced green onions, and thinly sliced carrots. Cook until pasta is al dente.
14. Chicken Chopped Salad - Toss shredded rotisserie chicken, finely sliced Napa cabbage or iceberg lettuce, shredded carrots, canned black beans (drained and rinsed), frozen corn (thawed), and chopped green pepper. Toss with your favorite ranch dressing. Top with crumbled tortilla chips.
15. Chicken Pita - Fill a pita pocket with cooked chicken, cubed avocado, a squirt of lime juice, chopped cilantro, and chopped tomato.
