I always fall into that trap of buying a bag of onions thinking "It's cheaper! And you get so much more!" Then, after baking a roast, making some vegetable soup and perhaps one or two other meals, I find myself at the bottom of the bag with no use for the last few wilting onions.  (Am I the only one this happens to?) The thing is, I have been raised with the "waste not, want not" attitude, so no way am I throwing those babies out! And off searching for an onion recipe I go. This time my recipe hunting resulted in Hearty Parmesan Soda Bread - it doesn't use a whole lot of onion, but it's just enough for some great flavor. And since it's a soda bread, there's no waiting around for the bread to raise! The cheesy flavor and hearty substance turned out to be a great side to a warm winter meal.

The make your own Hearty Parmesan Soda Bread, begin by prepping your ingredients - chop up that last onion. Then set your oven to 350 degrees.

Now, combine the flour, parmesan cheese, sugar, baking powder, baking soda, salt and onion in large mixing bowl.

Cut in the butter using two knives or a pastry cutter. When you're done, the mixture will look like big crumbs.

Add the milk and sour cream until the dough is just moistened. I used a spatula to fold it all together.

Now, flip the dough out of your bowl on to a lightly floured surface (like a cutting board). Knead the dough for about a minute. When you're done, it should be pretty smooth.

Divide the dough into two rounds and place them on a greased baking sheet. Then use a brush to spread egg whites on the top. This will give the bread a beautiful, smooth, golden look when the loaves are finished baking.

Sprinkle each loaf with additional parmesan cheese, then cut an "X" about a half inch deep into the top. Place the baking sheet into the oven and bake for 45-50 minutes.

When the bread looks golden brown, remove from oven and allow it to cool a little.

When the bread is cool enough to touch, slice it into wedges and slather with a little butter. It's great on its own, so we devoured one of these yummy Hearty Parmesan Soda Bread loaves by itself. Then we saved the other loaf in a resealable bag, and heated it in the oven the next night to eat with our meal.
