I love fall. Have I made that clear yet? What I may not have mentioned yet is that I also LOVE girls' nights! So I was thrilled last weekend when I got to spend Friday evening with two of my favorite girlfriends - Kristine and Katrina. While our hubbies were out of town being outdoorsy, we made dinner together, saw a chick flick (that the hubs would have groaned through if I had dragged him along - but we loved it!), and of course, needed a treat to top off the evening. Since Kristine is an ardent Land O’Lakes Recipe Buzz™ Blog follower (she has tried nearly every recipe that we've posted!), I voted to tackle these tasty, perfect-for-the-season Candy Bar Caramel Apples together so we could put our apple-orchard purchases to use, and she could be part of the Buzz! Plus, this recipe is a cinch and requires very little prep (perfect since girls' night is mostly planned on the fly).
First, wash your apples and skewer them with the craft sticks (conveniently, the bag of caramel bits I purchased had sticks included in the bag). Line a baking sheet with waxed paper, spray it with cooking spray and set it aside for after the apples are dipped.
In a sauce pan over medium heat, combine your caramel bits with the butter and milk. Stir occasionally until the caramel bits are melted and smooth. While you are waiting for this, you can chop up your candy of choice in a plastic container (I chose Snickers. Since they have chocolate and caramel in them already, I thought they would be a nice compliment). Set that container aside so you have it ready for later.
Remove the caramel from the heat and add in the milk chocolate baking chips.
Place the pan back over low heat to keep the chocolate caramel dip smooth. Then, take each apple and twist it in the sauce. I found that it helped to tip the sauce pan to the side a bit so more coating could gather together. If you need to, use a wooden spoon to make sure the whole apple gets covered. Let the excess drip off.
Now grab that chopped candy. Lightly press the bottom of the coated apple into the candy.
Line the coated apples on your prepared baking sheet, then place the pan in the fridge for at least an hour. I recommend waiting until after the apples have cooled to drizzle your white chocolate (Our chocolate coating wanted to slide off if we handled the apples too much). Now's your chance to leave for a Friday night flick, like we did! Let the coating set.
Once the apples have cooled, melt your white chocolate baking chips in the microwave, then use a spoon or spatula to drizzle your "gourmet" designs. I am not afraid to acknowledge that the official recipe photo is intimidating! Who can make perfect criss-crosses like that?! So, don't worry about it. Just add your own personal flare.
Ta-dah! You finish with gorgeous, caramel-and-milk-chocolate-dipped, candy-kissed, white-chocolate-laced apples fit for a candy store window. Eat one now, and save the rest in the refrigerator by wrapping each in its own square of waxed paper. These embellished caramel apples are sure to impress!
