Girls' Night Special...Artichoke and Jack Dip with Pita Chips!

There's nothing more fun than getting together with some of your closest girlfriends for a Girls' Night.  Since all of my closest friends are moms, we rarely have the opportunity to get together.  But when we do, it's a blast!  A little music, some wine, great conversation, and plenty of munchies is all it takes to make us happy!

We typically try to get together every couple of weeks.  Because we all have 2 or 3 kids, it makes sense to gather at someone's house rather than try to go out.  So while the mom's chat about what pains our kids have been (and how many hours our hubbies have been working), the kids run around and play with their friends.  It works out nicely all around!

But what's the secret to a great Girls' Night? It's all about the food!  For our last get together, I made some Artichoke & Jack Dip with Pita Chips and it was a huge hit.  While I'm a fan of just about every hot, cheesy dip, I thought this one was great.  The homemade pita chips were incredible!  I don't think I'll ever buy them at a store again...

Begin by mixing together the melted butter and taco seasoning.  If you don't have a full stick of butter, no worries! I used about 3/4 of a stick, and it worked out just fine.

Next, cut the 3 flat breads into 6 pieces.  I began by cutting mine in half, and then I cut each half into three pieces.

Now cut each wedge in half so you end up with 36 pieces.

Place the wedges onto an ungreased cookie sheet and gently baste each one with the melted butter.  As you can see below, I like to line my pan with parchment paper or a baking mat to reduce the chance that the chips will stick.  It also makes for easier cleanup.  When you're done, you throw the paper in the trash.  No washing needed

Bake the chips for about 8 minutes in a 375 degree oven.

After 8 minutes, remove the chips from the oven and give them a flip.  I also brushed them with butter again...Yum!

While the pita chips toast in the oven, you can begin with the dip.  In a medium-sized bowl, mix the mayo, cream cheese, garlic salt, and hot pepper sauce together until smooth and creamy.

Next, drain and coarsely chop the artichokes.  While I like artichoke, I think a full can is a bit much for the dip (unless you're a die-hard artichoke lover).  Two-thirds of the can worked nicely for me...

Using a spoon or spatula, gently stir in the chopped artichoke and one and a half cups of cheese.

Put the dip an ungreased baking dish and set aside.

By now the chips should be completely toasted and ready for some dip!  Put them in a bowl or on a decorative serving platter and set aside.

To complete the dip, chop some tomato and green onion.

Top the dip with the remaining cheese and chopped tomato and onions.  Bake it until the cheese is bubbly, and the dip is heated throughout.

Voila!  Not only does it look beautiful, but it also tastes incredible.  Whether it's Girls' Night, Family Night, or you're just hanging around the house looking for a snack, this one won't disappoint!  My only word of caution is to make extra chips...They're so good!
