Greek Flatbread Pizza for the Fam

With a baby on the way, Ryan and I decided to rent out our townhouse on the other side of the city and made an offer on a home closer to our parents and siblings. The catch was, between the renters moving in and our close date on the new house, we would have a month of no house at all!

With a baby on the way, Ryan and I decided to rent out our townhouse on the other side of the city and made an offer on a home closer to our parents and siblings. The catch was, between the renters moving in and our close date on the new house, we would have a month of no house at all! It would be a four-week limbo period.

Fortunately for us, my parents welcomed us to stay with them for that stretch at the end of the summer. Initially Ryan cracked some jokes about how it was "just a man’s dream – to live with his in-laws" but as it turns out, we had a great time hanging out with my family and the endless assortment of friends and relatives that are always visiting! Ryan is totally a people-person, so he loved the crazy-busy atmosphere more than anyone. And I’m not going to lie, it’s really nice to have your mom bake you cookies and tell you to put your feet up when you’re eight months pregnant.

One of our arrangements for living with my parents was that we would be responsible for family dinner at least one night a week. This gave us a great opportunity to try out new recipes and to "wow" them with our fabulous cooking skills (wink, wink!). "Family dinner" our first week turned out to include, us, my parents, my sister, and four of her friends. This was a little different than our usual cooking for two! I had been wanting to try this awesome-looking Greek Flatbread Pizza recipe and figured that we could provide other fixings too, for pickier eaters to build their own pizzas. The Greek Flatbread turned out to be fabulous (even those who had been skeptical couldn’t get enough!) and the prep went quickly so everyone could still make it to their evening commitments on time.

To make these yummy flatbread pizzas, start by preheating your oven to 400° F. Place the two Naan crusts onto a pan. Cut or - tear in half - 8 pieces of LAND O LAKES® Italian Blend cheese and lay them across each flatbread. This softer cheese is what will make the Greek Flatbread deliciously ooey and gooey!

Wash and chop all of the veggies. Grab the feta and olives so you’re ready to layer up your flatbread. chopped, vegetables, pizza

Layer red pepper strips, sliced olives, artichokes and green onions onto each pizza.

Crumble the feta cheese on top of all of the vegetables.

Then distribute parts of 8 more slices of Italian Blend Cheese, topped with slices of tomato.

Place the pan of flatbreads in the oven and bake for 21 - 25 minutes or until the cheese is melted and bubbly.

Remove the flatbreads from the oven and sprinkle them with fresh basil or mint (I went with basil).

Cut each Greek Flatbread Pizza into quarters and serve it up. The soft crust of the Naan combined with all those fresh Greek flavors is going to make you wish you had made more!
