BBQ Chicken Pizza: My Weeknight Winner

I am a total sucker for thin-crust Barbequed Chicken Pizza on a weeknight. It takes me to a happy place where work is over and relaxation begins. And sure, you can buy the frozen stuff, but then you don’t get to add your favorite extras (more mushrooms, please!) and you certainly don’t feel like you can serve it to guests. But homemade pizza? I mentioned some time ago that I have new neighbors.  The young couple, Kirby and Annie, who moved in down the block, went to college with my son Ryan and his wife Amanda.  I am excited to have them in the neighborhood and am really excited about their new addition – a beautiful baby girl.  Kendall was born on February 5. Burg-a-lation Celebration

The very first winter that Ryan and I were married, we were loving having our own place and were anxious to do some entertaining, so we decided to throw a couples party. Of course, the only cooking we really knew how to do was grilling… and in the dead of winter in Minnesota that may sound a little crazy. But we are young, so crazy is what we do. With that idea - and basically no cooking skills - the annual “Burg-a-lation Celebration”  was born. (more…)

Veggie Chili with a Southwestern Flair

During the school week, we have a few days with multiple after school activities that make preparing dinner close to impossible. We use our crock pot sometimes, but I also like to find recipes that can be made ahead. The White Bean Chili recipe seemed perfect for a wintery dark night. I made the chili on Sunday, so when Monday came with all its school day and after school hustle and bustle, we had a fabulous one-pot meal ready to reheat and serve. (more…)

I love the opportunity to use my oven!  And now that I think of it…I don’t use it nearly as often as I should.  What’s easier than throwing a piece of meat in the oven for an hour or two to let it roast?  Plus, I always feel better about dinner when I get to use my oven.  It makes it seem like I slaved over dinner when it’s served…well, and it makes the kitchen smell incredible! ‘Not Just Another Sunday’ Breakfast

Nothing says “family” more in our home than a big Sunday breakfast!  As a store manager for the local Home Depot, my husband Jeremy typically works crazy retail hours.  Sunday, however, is the only day of the week when the girls and I have him all to ourselves.  So to celebrate, we always make a  family breakfast.  Whether it’s pancakes with sausage or biscuits with gravy, it’s all about spending time together! Shrimp Flatbread Pizza

I have always adored shrimp.  Even as a child I loved shrimp.  I remember going out to “fancy” restaurants as a young girl with my grandparents and I always ordered shrimp.  Oh, and then there are artichokes; another favorite of mine.  I was fortunate to grow up in a family that ate a wide variety of foods – including artichokes.  And, cheese – who doesn’t love cheese?  (more…)
