The strangest thing happened to me....Tyler, my 6-year old, asked if we could have a repeat of the chicken nuggets I had made the other night. Then, he offered to help? According to him they were "the best nuggets I’ve ever had...awesome-tastic, A to the mazing, Nuggalicious pieces of goodness." (Mental note to self, cut sugar out of his diet.) He used a description like that? How could I refuse?
Before I knew it, he was getting out the step ladder and the cereal we used to make them. Guess I’d better jump in before he tears the place down making these himself! Believe it or not, these are actually really easy …so easy, my 6-year old made them (with my help)!
The preparation time of these Taco-Seasoned Chicken Nuggets really didn’t even take us the full 10 minutes to make. Even better...this only uses 4 ingredients! Yes! My new favorite recipe - these ingredients are all ones we have in the house already, so I don’t even need to make a trip to the store!
We heated the oven to 400°F and sprayed a baking sheet with no-stick cooking spray.
Tyler took out the corn flakes cereal and put 4 cups into a large re-sealable bag. To avoid total mess & mayhem, I put the bag inside a large measuring cup so that the bag would stay open as the cereal was poured in.
He added in 2 tablespoons of mild taco seasoning from a purchased 1.5 ounce package (one of the taco seasoning packets you see on the shelves near the Mexican food aisle).
Seal the re-closeable bag securely at the top.
Crunch them up! We found it was easiest to use a rolling pin to smash them up into "itsy, bitsy, teeny, tiny" pieces.
Besides, who wouldn’t want to use a rolling pin as a weapon of choice? "Hiiiiii-ya! take that, corn flakes!" After the corn flakes are crushed, give the bag a shake to ensure that the taco seasoning and cereal mix well together.
If you have little helpers who like to shake the bag, make sure the bag is completely sealed. We have heard the "I know it’s sealed" statement only to have it end up all over the kitchen. Oops.
Next, place 1/3 cup of Land O Lakes Fresh Buttery Taste Spread into a small bowl. Then melt it slightly in the microwave - I think we only melted it for 15 seconds, so it just became really soft and easy to coat the chicken.
This next step I helped with. I’m all about equal opportunity in the kitchen except where salmonella and cross contamination is concerned! Take out 1 pound of chicken and cut it into 1-inch pieces. I find it to be really easy to trim the chicken and cut using a pair of kitchen shears. It goes faster for me and I just put the shears in the dishwasher afterwards.
Place the chicken into the butter mixture so that the butter coats the chicken.
Put the chicken back into the corn flake mixture and shake the bag to completely coat the chicken.
We found it easy to take 1/4 of the chicken out at a time so that the chicken gets fully coated in the bag.
Remove chicken piece by piece from the bag and place onto the prepared baking sheet.
Bake for 8 to 10 minutes until cooked through. I cut one open to check if they were done. These were done after baking for around 9 minutes.
While the nuggets are baking, you can make up a simple dipping sauce made with 1/2 cup sour cream and 1/4 cup salsa. Just combine in a bowl and stir it up!
Quick and easy (not that anything could readily challenge ketchup in our household - it’s nice to have a change of pace for a bit!).
They came out great!
Having big bro make dinner, little bro knew it was going to be good! Shoes were kicked off and they were both running to the table to dig in!
This recipe was so quick and easy that Tyler, my 6-year old, honestly was able to prepare most of it himself! It took less than 25 minutes to get dinner made and on the table. With one recipe we made about 30 nuggets. We had leftovers that we were able to freeze for another day! Hope you enjoy these Taco Seasoned Chicken Nuggets as much as we did!
