I am right in the middle of that beautiful time when you get to celebrate love and life (weddings and babies) just about every weekend of the spring and summer. What a gift to be part of so many wonderful lives! Plus, I love a good party with great food (I am my mother's daughter). So, when our friend Marla got engaged to the love of her life last fall, my mom and I decided to throw our own fun, fresh afternoon shower for her to celebrate with a variety of fabulous women who have nurtured and mentored her along the way.

As the shower date neared, we mulled over several meal ideas before settling on a salad luncheon. This gave our guests the opportunity to choose whether or not to include meat (grilled chicken), select their favorite veggies, toppings and salad dressing. And to go along with that light lunch, I wanted to prepare a sweet treat that would follow suit - fruit seemed in order. This is pretty out of character for me since I'm a chocolate girl, but this dessert needed to be special and fresh. So, I selected a new recipe to try: Fruit & Cream Tart. I was a little nervous to stray from my usual stand-bys, but I will tell you up front that it was fabulous. It's sweet, refreshing, simple to prepare, and it looks lovely on a plate. This is a perfect recipe for a shower!

The prep is easy. You begin by preheating your oven to 400 degrees F. Then combine your softened Land O'Lakes butter and sugar in a medium-sized bowl. Beat it at medium speed until the ingredients are well mixed and creamy.

Then add your flour, milk and almond extract. For those of you who aren't almond fans, you can replace the almond extract with vanilla extract. This is a slightly milder flavor and was the route I chose.

Mix thoroughly. This is the point when I said, "I wish that I had a blog to follow! I don't know what this is supposed to look like!" My crust mixture seemed a little dry still, so I called Becky for some help.

Becky suggested that either the butter might not have been soft enough, or I might be a "heavy flour measurer" - which would explain why the crust wasn't moist enough. This had never really occurred to me, but hit the nail on the head since I mostly eyeball my measuring. She suggested adding a little more milk and mixing the batter thoroughly. This did the trick.

Now, grab that ungreased 15 x 10 x 1" jelly roll pan and press the dough evenly across the surface.

Then prick the dough with a fork to make sure that the crust doesn't puff.

Now bake the crust for 13 -20 minutes until it's golden brown. Let it cool completely.

Prepare your tart's frosting (this can easily be done while the crust is baking or cooling). Simply mix together  Land O'Lakes sour cream, sugar and vanilla. Put the mixture in the fridge to stay cold.

When you're sure the crust has reached room temperature, spread the frosting on top.

Now it's time for cutting your portions. The recipe says that this prepares 48 servings, but that seemed far too small to me, so I made 24 triangles instead. Simply cut the tarts in 12 squares, then cut the squares diagonally into triangles.

Last is my favorite part - you get to place the fruits of your choice in pretty, decadent arrangements. Mint leaves also add an elegant - and edible - touch.

Refridgerate your tarts until you're ready to serve them. Then prepare a tart for each plate along with any other fruits and garnishes your guests prefer. Your guests and the beautiful bride-to-be will fall in love with it!

Linda, I hope these tarts are a hit at your baby shower! One of the great things about this recipe is that you can use whatever fruits are in season, or customize the toppings with whatever you (or the guest of honor) love best! So, pick your favorites and let us know how the recipe goes for you.
