Q Every year about this time, I make roll-and-slice cookies. I also freeze some drop cookies. I like to make things ahead. Do you have other ideas for freezer cookie recipes and holiday prebaking?

How wonderful to reward yourself for your industriousness and bake it forward! Anyone with freezer space can easily make and freeze cookies and candies throughout November and December. Then, simply thaw and frost or decorate before your event, or anytime you need a gift.

Our site offers lots of tips for cookie baking, including freezing cookie dough or baked cookies—just remember to freeze first, and frost and decorate after your treats are fully thawed or baked and cooled. Festive Eggnog Snowflakes are a joy to decorate with an easy glaze and some sprinkles. Caramel Peanut Mini Tarts are a decadent combination, and the creamy chocolate-peanut topping is easily added after thawing. A simple drizzle adorns Chocolate Chip & Ginger Cookies, long after the baking is done. Leave the best for last, and enjoy every minute of decorating!

So far I haven't found a cookie recipe that I can't freeze "raw". I make the dough, shape the cookie, freeze flat, vac pak (or freeze very well wrapped). Then take out and many as few or as many as I want. Great for those cool nights to warm the house, those snackin' cravings or when company walks in the door. Ten-twenty minutes and I have fresh baked cookies, no fuss, no muss and no clean up.

I've been a Christmas Cookie Monster for years and have found that even my chocolate-dipped and most decorated cookies will retain their flavor and freshness when packed carefully. I have several heavy plastic containers which I use and always put a layer of waxed or parchment paper between each layer of cookies. Same goes with candy. When you're ready for the goodies, let them thaw in their freezer containers (thawing that way keeps the condensation on the container and away from the cookies inside). I start my holiday baking and candy making the first week of November. Happy Holidays to everyone.
