Tasty, Quick Teriyaki Shrimp & Pineapple Grill Packets

This past weekend was glorious! We had perfect weather for catching up on our yard work. We spent all of Saturday afternoon weeding and tending to our overgrown “problem” areas. Ryan’s mom, Becky, was even so kind as to come over and play with our toddler so that he could be outside, too – without getting too close to the clipping shears and other dangerous tools.


It was a very productive and satisfying day. We really worked up our appetites, but by the time the outside projects were done, we felt too tired to make an involved dinner. Fortunately, grilling is always one of our go-to choices, and when the weather is cooperating, how can you say no?!


We thought shrimp sounded good (it’s one of Becky’s and my favorites), so we decided to make these easy Teriyaki Shrimp & Pineapple Grill Packets with one of the handy Sauté Express® Seasoned Meal Starters. All we had to do was put everything together, throw it on the grill, and our entire meal was ready! It was the perfect solution for our hungry little group. Here’s how you make the packets:


Start heating up the grill while you prep the few ingredients. Make sure the shrimp is thawed, and wash and chop the green onions and pepper.


Stack two layers of heavy-duty aluminum foil together. Note: I didn’t realize that “heavy” foil was a specific kind of foil that happens to be extra large. So, I stacked two layers of regular foil. Read on for how I sealed my shrimp packet.


Cut two Teriyaki Sauté Express® squares into quarters and spread them on the foil.


Place the shrimp in a single layer on top.


On top of the shrimp, sprinkle the green onions, red pepper and pineapple chunks.


Finally, top everything with a layer of jasmine rice (I made my rice in a steam cooker while we did our yard work, so it was “easy peasy.”).


Now, if you used heavy-duty foil as recommended in the recipe, bring the long sides of aluminum foil together. Then seal top and sides of packet. Or, if you’re like me and using regular-sized aluminum foil, stack two pieces of foil the same length as your bottom pieces of foil. Place them on top of the ingredients. Roll each side together to form a seal around all edges (I did the two long sides first, and then the two short ends).


Place the sealed packet on the pre-heated grill and cook for 15-20 minutes.


When the time is up, peek in one end of the foil to see if the shrimp has turned pink (meaning that is has cooked through). Once I confirmed that, I opened the foil to get this clearer shot for you of how the cooked shrimp should look.


Finally, spoon all of those shrimp, veggies, pineapple, rice and the flavorful teriyaki sauce into a serving bowl and serve!


The Teriyaki Shrimp & Pineapple Grill Packet is a great way to get your protein, carbs and veggies pulled together (and you know it will be done and hot all at the same time!). Just serve with a side of fruit and your meal is complete. And, the teriyaki flavor is sweet and mild, so it’s a win for everyone – even our toddler ate the shrimp!
