The Celebrations Continue with Red Pepper Crostini

My family is in non-stop party mode this year! Earlier this spring I shared about the deliciously decadent Triple Chocolate Truffle Bars that I prepared for my sister, Laura, the-bride-to-be.

In the few short months since that post, the celebrations abounded. Laura has married the man of her dreams in a gorgeous spring wedding, our baby sister graduated from high school, my husband graduated from law school, and now we are gearing up to celebrate some more! In just a matter of weeks, our only brother will marry his longtime-friend-turned-true-love, Christine. While many women would be daunted to join a family with three tightly-knit sisters, Christine is a sweetheart and has jumped right into the sisterhood. She is friendly, authentic, loves to dance, plays a mean hand of cards, and is fabulous with kids. Basically, we love her!

Of course, the wedding isn’t the only event in this celebration process. My mom, sisters and I wanted to honor Christine with a bridal shower to welcome her and the women of her family. So, on a lovely Friday evening, we gathered family and friends for a dinner party. We prepared an elaborate build-your-own-salad dinner, played silly games – "Know the Groom" and "Name That Kitchen Gadget" – and enjoyed Christine’s favorite pies for dessert. I wanted to contribute something special to the meal (and was looking for an excuse to share my new sister with all of you), so I ran some appetizer choices by Christine. She chose the Roasted Red Pepper Crostini, which made me love her all the more, since I’ve wanted to try this recipe for months!

As it turned out, this appetizer is ridiculously fast to make – which is great, but also a little tricky when you need to prepare several batches and have twenty-five people chatting in and around your prep space. But with a little help from my sisters and our sweet cousin, Kirsten, we were able to rotate pans of crostini in and out of the oven in no time (and without burning anyone)!Trust me, if we can do it, you can do it. Here’s how you make your own Roasted Red Pepper Crostini:

Start by heating up the broiler. Then, melt the butter with olive oil in a small saucepan over medium heat. Add the garlic.

Cut the French bread into thin slices and place them on a baking sheet. Put them under the broiler for a minute or two, until they are lightly toasted (this happens fast, so keep an eye on them!).

Remove the bread from the oven and flip each slice over on the pan. Brush the garlic butter mixture onto the un-toasted side.

Layer a slice of Provolone cheese, then chopped red peppers on the buttered bread. Sprinkle each crostini with shredded parmesan cheese. Since we didn’t have fresh herbs on hand for garnishing, we sprinkled our second batch with dried basil at this point for a little additional flavor.

Place the pan back in the oven, under the broiler. Allow the crostini to bake until the cheese is just melted. Again, keep an eye on the pan. You can tell that a few of the crostinis in our first batch got crispier than we intended.

Lastly, remove the Roasted Red Pepper Crostinis from the hot pan with a serving spatula. Place them on a nice serving platter and your tasty, single-serve appetizers are ready for sharing! Here is the bride-to-be about to enjoy her yummy crostini.
