A Quick Bread Makes Entertaining Easy – Parmesan Butter Pan Biscuits

I mentioned in my blog last Thursday that I recently had a young family from my neighborhood over for dinner. Kirby and Anne brought their toddler Kendall and I also included my son, Ryan, and his wife, Amanda.

I mentioned in my blog last Thursday that I recently had a young family from my neighborhood over for dinner.  Kirby and Anne brought their toddler Kendall and I also included my son, Ryan, and his wife, Amanda.  Cheesy Tomato Basil Chicken Breasts was the main dish that night.  I wanted to serve a quick and easy bread that would complement the chicken so I chose Parmesan Butter Pan Biscuits.

Biscuits are one of my favorite quick breads because they use simple ingredients, are quick and easy to make, and everyone loves them.  This particular recipe dresses up a standard biscuit with the addition of Parmesan cheese and some herbs – parsley and basil.  I knew the basil in the biscuits would taste great with the basil in the chicken.

The one problem I encountered was that the chicken dish baked at 350°F while the biscuits needed an oven temperature of 400°F.  To solve the problem I decided to bake the biscuits before I put the chicken in the oven.  I was careful to only bake them until they were very lightly browned.  Then, once I took the chicken out of the oven I popped the biscuits back in the oven for about 5 minutes to warm them up.   They turned out great!  My guests even had seconds.

To make Parmesan Butter Pan Biscuits heat the oven to 400°F.  Place the butter in an 8-inch baking pan, then, place the pan in the oven.  In about 3 to 5 minutes the butter will be melted.  Remove the pan from the oven.

While the butter is melting, combine all the remaining ingredients except the milk in a medium bowl.

Mix all the ingredients to combine and add the milk.

Stir just until the flour mixture is moistened.

Turn the dough onto a lightly floured surface and knead 10 times or until smooth.

Roll the dough into a 12x4-inch rectangle.

Cut into 12 (1-inch) strips.

Dip each strip into the melted butter and then place the coated strip in the pan.

Here is what it will look like when all 12 strips are coated and in the pan.  Note that I made two rows of six strips each.

Bake for 25 to 30 minutes or until lightly browned.

Quick, easy and delicious – definitely good enough for entertaining!
