15 Chicken Recipes in 15 Minutes (More or Less)

Thank goodness for chicken. When I need something fast, I think of chicken. When I’m looking for a versatile backdrop for big flavors? Chicken is perfect. When I need something that will satisfy the adults and the kids at the table? That’s right. We all love chicken.

And I know I’m not alone. (Did you know that the average American eats more than 80 pounds of chicken every year?) So, I started thinking of all the ways my family takes this dinnertime staple and mixes it up, makes it a little special—but still very doable on a busy weeknight. We love to bring in flavors from around the world, and we love dishes that can be customized for every dinner, so you’ll see a lot of those.

What I want to give you here are ideas, sparks, pushes in the right direction, rather than full recipes. Then you can take each idea and make it the way your family will love. A note on timing: These dishes can be assembled in about 15 minutes if you already have your chicken cooked. For me, that might mean picking up a rotisserie chicken at the grocery store, or it might mean keeping cooked chicken breasts and thighs on hand in the freezer. spacer 1. Chicken Tostadas - Sauté bite-sized pieces of chicken in Garlic & Herb Sauté Express® Sauté Starter. Layer chicken, heated black beans, corn salsa, and sour cream on crunchy tostada shells—or add your favorite Tex-Mex toppings. spacer
spacer 2. Chicken Ciabatta - Layer pan-fried chicken, fresh basil, roasted red pepper and sliced mozzarella on toasted ciabatta rolls. Broil for two minutes. spacer
