This simple recipe can easily be doubled, or even tripled.

(1/2-inch thick) slices baguette-style French bread |

tablespoons LAND O LAKES® Butter, softened |

ounces (1/2 cup) blue cheese crumbles |

teaspoon finely chopped fresh chives or green onions |

Dash ground red pepper |
| 1/4 |

cup finely chopped red and/or yellow bell pepper* |

tablespoon finely chopped fresh parsley |
Heat oven to 400°F. Spread one side of bread slices with 1 tablespoon butter. Place onto ungreased baking sheet, buttered-side up. Bake for 8 to 10 minutes or until edges are golden brown. Cool slightly.
Meanwhile, combine remaining butter, blue cheese, chives and ground red pepper in small bowl; mix well.
Turn bread slices over. Spread unbuttered sides evenly with blue cheese mixture; sprinkle with bell pepper. Bake for 5 to 6 minutes or until cheese mixture begins to melt. Sprinkle with parsley. Serve warm.
*Substitute 1/4 cup finely chopped walnuts.
TIP: For easy entertaining, prepare toasted bread slices and cheese mixture early in the day of your get-together. Store toasted bread slices in a tightly covered container at room temperature and cheese mixture covered in the refrigerator. When ready to prepare appetizers, let cheese mixture come to room temperature for easier spreading.
