leek, sliced, washed, chopped* |

(15 1/2-ounce) cans great Northern beans, rinsed, drained |

(14-ounce) cans chicken broth |

cups packed fresh baby spinach leaves |
Melt Butter with Olive Oil in 3-quart saucepan over medium-high heat; add leek and garlic. Cook, stirring occasionally, until leek is softened (2 to 3 minutes).
Stir in flour until mixture is smooth. Stir in all remaining ingredients except spinach. Continue cooking, stirring constantly, 2 minutes. Reduce heat to medium. Cook, stirring occasionally, until soup is slightly thickened (8 to 10 minutes).
Stir in spinach. Continue cooking, stirring occasionally, until heated through (2 to 3 minutes).
*Substitute 1 medium (1/2 cup) onion, chopped
