Host a quesadilla party and let your guests participate in the quesadilla making!

Preparation time: 1 hrs  
Yield: 16 quesadillas 

Filling Ingredients:

4   cups chopped cooked chicken
1   pound lean ground beef, cooked
1   (15 1/2-ounce) can black beans, drained
1   (15-ounce) can refried beans
1   medium (1 cup) green and/or red bell pepper
1   (4-ounce) can chopped green chiles, drained
2   medium (2 cups) tomatoes, chopped
1   medium (1/2 cup) onion, chopped
1/2   cup chopped fresh cilantro
12   ounces (3 cups) LAND O LAKES® Cheddar Cheese, shredded
12   ounces (3 cups) LAND O LAKES® Monterey Jack Cheese, shredded

Tortillas Ingredients:

16   (8-inch) flour or corn tortillas

Toppins Ingredients:

  Shredded lettuce
  Guacamole
  Salsa
  LAND O LAKES® Sour Cream


Place each filling ingredient into an individual serving bowl.

At serving time, heat 12-inch skillet or griddle over medium heat.

To assemble each quesadilla, spray 1 side of 2 tortillas with no-stick cooking spray. Place desired ingredients onto unsprayed side of tortilla. Top with second tortilla, sprayed-side up. Repeat assembling quesadillas with remaining ingredients, as desired.

Cook each quesadilla, turning once, until lightly browned on both sides (3 to 4 minutes).

Cut into wedges. Serve with toppings as desired.
