Not your basic bran muffin--these muffins are chock full of bananas and honey.
Heat oven to 375°F. Stir together bran cereal and fat free half & half in large bowl. Let stand 5 minutes.
Stir butter, honey, bananas and egg into bran cereal mixture. Stir in flour, baking powder and salt just until moistened.
Spoon batter evenly into 12 paper-lined or greased muffin cups. Bake for 15 to 18 minutes or until lightly browned. Serve with Light Butter with Canola Oil.
VARIATION: Banana Honey Bread: Prepare batter as directed. Spoon batter evenly into 3 (5 1/2x3-inch) greased mini loaf pans. Bake at 350°F for 30 to 35 minutes or until lightly browned. 24 servings (3 loaves).
