Bake this flavorful banana bread and serve it with a main dish salad for a light meal.

tablespoon freshly grated orange peel |

teaspoon vanilla |

cup orange juice |

medium (1 cup) ripe bananas, mashed |
| 1 |

cup sweetened flaked coconut |
| 1 |

(3.25-ounce) jar (2/3 cup) macadamia nuts or walnuts, coarsely chopped |
Heat oven to 350°F. Combine all ingredients except bananas, orange juice, coconut and nuts in large bowl. Beat at low speed, scraping bowl often, until well mixed.
Add bananas and orange juice. Continue beating, scraping bowl often, until well mixed. Stir in coconut and nuts by hand. (Batter will be thick.)
Spread into 3 greased (5 1/2x3-inch) mini loaf pans. Bake for 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.
