These savory potatoes are flavored with Parmesan cheese and topped with red pepper and parsley.

medium (6 cups) baking potatoes, washed, unpeeled, cut into 1/8-inch slices |

cup grated Parmesan cheese |
| 1/4 |

cup finely chopped red bell pepper |

tablespoons chopped fresh parsley |
Heat oven to 350°F. Combine, butter, salt and pepper in large bowl. Add potatoes; toss to coat.
Layer half of potatoes in ungreased 13x9-inch baking pan; sprinkle with half Parmesan cheese. Layer with remaining potatoes.
Cover with aluminum foil. Bake for 30 minutes. Uncover; sprinkle with remaining cheese. Continue baking, uncovered, for 20 to 30 minutes or until potatoes are crisply tender.
Sprinkle with red pepper and parsley before serving.
