How To Create the Perfect Hamburger
  • 75% to 85% lean ground beef is good to use when making hamburger recipes. It keeps its shape well and remains juicy because of its higher fat content. Use 85% to 95% lean ground beef if you prefer a leaner hamburger.
  • To keep the juices in the hamburger, don't press them with a spatula or pierce with a fork.
  • Cooking hamburgers at too high of a temperature will dry them out and overcook them. Keep coals at a medium heat of 350° to 375° F.
  • Be sure to cook your hamburgers until the centers are no longer pink or to a temperature of 160° F. If using a food thermometer to check the temperature of your hamburger, test the thickest part.
