Merry Cherry Cheesecake Bars

Cheesecake bars made festive with red and green cherries. These easy cheesecake bars are sure to become a family favorite.

Ingredients

Crumb Mixture

1/3 cup Land O Lakes® Butter, softened
1/3 cup firmly packed brown sugar
1 cup all-purpose flour

Filling

1 (8-ounce) package cream cheese, softened
1/4 cup sugar
1 egg
1 tablespoon lemon juice
1/4 cup chopped green candied cherries
1/4 cup chopped red candied cherries

Directions

Heat oven to 350°F. Combine all crumb mixture ingredients in small bowl. Beat at low speed, scraping bowl often, until well mixed. Reserve 1/2 cup crumb mixture. Press remaining crumb mixture onto bottom of ungreased 8-inch square baking pan. Bake for 10 to 12 minutes or until lightly browned.

Combine all filling ingredients except cherries in same bowl. Beat at medium speed until smooth. Stir in cherries by hand. Spread filling over crust. Sprinkle with reserved crumb mixture. Continue baking for 18 to 20 minutes or until filling is set. Cut into bars while warm. Cover; store refrigerated.

My mama used to make these at Christmas. I thought we had lost the recipe. So glad it is still out here.

I have made this for years and my family just loves it. It's part of my Christmas collection.
In 1980 at the age of 9, my mother had found the recipe for Merry Cheesecakes she had saved from a Land O' Lakes butter box. That was the very first Christmas she started making those treats and ever since it's been a long lived never ending tradition. Now I have been making the recipe for holiday parties.
I found this recipe on the Land O Lakes carton over 20 years ago. It had so much butter on it I couldn't read it any more.
It has been a family favorite for as long as I can remember. It is a family tradition to use Land O Lakes. I can remember my Mother using it when I was a kid. Other than right from the farm, there is no better butter anywhere.l
Tastes like cheesecake, is really easy to make and keeps well wrapped in the refrigerator. I make it all year round. Found the recipe inside a butter package 20+ yrs ago and copied it on a file card. The file card is yellowed and stained and now that I see the recipe on your site I guess I changed it a bit and chaged 1/3 c to 1/2 c to use a full stick of butter and upped the sugar to 1/2 and the flour to 1 and 1/4 cups. It makes a little thicker crust and I don't have to worry about saving a partial stick of butter!! My family expects me to make these each Christmas but sometimes I surprise them and make them at other times during the year. They're great!!

recipe(taken from a carton of butter) and
was extremely relieved to find it on your
website. My husband was a police officer,
and I baked cookies by the gross at
Christmas for the department. He always had
to hide these cookies so that everyone had a
chance to have one.
I found this recipe in a magazine years ago. It is one of my family's favorite Christmas cookies.
This is the first Land O' Lakes cookie recipe that I tried, lots of years ago. My family loved it and they always make sure that it's on my list to make every Christmas. There's no doubt that I have to make more than one recipe, so that I have enough to share as every one's going home. It's a real "keeper" of a recipe...one that's easy to make, stores well in the frig, is a beautiful and festive cookie, and tastes wonderful too.
