Tiny Apricot Almond Squares

This Scandinavian bar is a cross between shortbread and cake.

1 cup sugar
1/2 cup Land O Lakes; Butter, softened
1/2 teaspoon almond extract
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup apricot preserves
3/4 cup sliced almonds


Heat oven to 350°F. Line 15x10x1-inch jelly-roll pan with aluminum foil, extending foil over edges. Lightly spray with no-stick cooking spray; set aside.

Combine sugar and butter in large bowl. Beat at medium speed until creamy. Add egg and almond extract; continue beating until well mixed. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed.

Press mixture evenly into prepared pan. Spread apricot preserves evenly over batter. Sprinkle almonds evenly over preserves. Bake for 20 to 25 minutes or until set and just beginning to brown. Cool completely. Sprinkle with powdered sugar. Lift bars out of pan, using foil ends. Cut into 1 1/2-inch squares.

This recipe was very quick to make and tasted awesome! My husband has requested it again for Christmas. I was planning on making it half apricot and half cherry this time.
I love this recipe!! I have made it several times ad it is ALWAYS a hit! I use a pizza cutter sprayed with a little non stick spray to cut the squares. Perfect with coffe and tea after a big holiday meal.
The bars are easy, quick and delicious, but much too sweet even though the sugar was reduced a bit. My recommendation is to cut the sugar by 1/4 or 1/3 cup to compensate for the sweetness of the apricot preserves.
