Slice-and-Bake Gumdrop Cookies Recipe

Stained Glass Cookies

A fun slice-and-bake cookie. Older kids can help cut the gumdrops; younger ones can help roll the cookie dough in decorator sugar.

1 cup Land O Lakes® Butter, softened
1 cup powdered sugar
1 teaspoon vanilla
2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup gumdrops, cut into small pieces
4 tablespoons decorator sugars


Combine butter and powdered sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in gumdrops.

Divide dough in half on lightly floured surface; shape each half into an 8x1 1/2-inch log.

Place 2 tablespoons decorator sugar on large piece of plastic food wrap. Roll 1 log in decorator sugar to coat. Wrap tightly in plastic food wrap. Repeat with remaining log and decorator sugar. Refrigerate 8 hours or overnight until firm.

Heat oven to 350°F.

Carefully cut logs into 1/4-inch slices with sharp, serrated knife. Place 1 inch apart onto ungreased cookie sheets. Bake 8-10 minutes or until set. Cool 1 minute on cookie sheet; remove to cooling rack.

Recipe Tip

If gumdrops stick to knife when cutting, hold knife blade under hot tap water to warm blade; dry blade and continue cutting. Blade can also be lightly sprayed with no-stick cooking spray as often as needed.

These are very yummy. I made two batches - one with gum drops and one with fruit chews. I also used parchment paper for second batch....worked much better than without.
These cookies were a big hit with my sixth grade students!!
